Soda Cake with Whipped Topping

  • 1 box yellow cake mix
  • 12 ounces diet soda of choice, light in color
  • fresh strawberries, chopped
  • cool whip


  • Preheat over 350 degrees F. and spray a 9 x 13-inch baking pan with non-stick cooking spray or grease it with oil.
  • In a medium bowl, pour in the entire box of yellow cake mix and for a well in the center and slowly pour in the diet soda. The mixture will become foamy and that is perfectly fine.
  • Using a whisk, mix the cake batter until it is combined and there is no dry mix left. Be careful not to over mix, the batter will be lumpy.
  • Spread the cake batter into the prepared pan and smooth with a spatula to make sure it is even. Place into the oven and bake for 20 minutes or until the cake tester comes out clean.
  • Allow the cake to cool completely and top with cool whip and chopped strawberries.
  • This cake will be very light and moist. It’s the perfect treat to make use of strawberries (or any of your favorite fruit) and great to enjoy on a warm almost summer day!
