Ingredients You'll Need
- Olive Oil - Needed to saute the onion, bell pepper, and garlic mixture. Depending on the kind of sausage you're using, you may use less olive oil. Feel free to substitute with avocado oil or any neutral oil that you prefer or have on hand.
- Sausage - Any pound of smoked sausage will work. This adds flavor and is a large part of the recipe. You may select sweet or spicy type of sausage and even Italian flavored or chicken sausage and turkey sausage will work.
- Potatoes - I prefer to use baby gold potatoes (Yukon gold) or baby Dutch yellow potatoes. You can use any baby potatoes, red potatoes, or even sweet potatoes for a sweeter taste. Make sure that you dice the potatoes into smaller pieces so that they cook evenly and quickly. No need to peel the potatoes for this one.
- Onion - Any yellow onion or white onion will work to add an earthy and slightly sweet flavor. Try to avoid using red onion for this particular recipe.
- Bell Pepper - Dice a green bell pepper to add a peppery and slightly sweet flavor to the dish. If you prefer to use red pepper (red bell pepper) instead, you could use that in the same unit of measure.
- Garlic - Use minced fresh garlic cloves to add intense and pungent flavor. Add more if you prefer because there is no such thing as too much garlic.
- Fresh Thyme - Be sure to use freshly chopped thyme to add in the flavor of woody and slightly floral.
- Paprika - Adds a bit of smokiness and savory flavor. Use regular paprika instead of sweet.
- Salt and Ground Black Pepper - Seasons the overall skillet and bring out the other ingredient flavors.

Step By Step Instructions
Begin the recipe by grabbing a large skillet, cast iron skillet, or braiser and placing it on the stovetop over medium high heat. Once the pan has heated, add the olive oil and allow it to warm up.
Add the sliced smoked sausage and cook turning at least once, to lightly brown on both sides, about 5 minutes. Carefully remove the sausage from the skillet into a separate bowl. Set aside.
Using the same skillet, with the oil still in the skillet, add the chopped onion and diced green bell pepper. Saute until it begins to soften. Add the minced garlic and allow it to cook for an additional 1-2 minutes until fragrant.
Adjust the heat to medium and stir in the diced potatoes, fresh thyme, paprika, salt, and ground black pepper. Cook, stirring occasionally, until the potatoes are fork tender and golden brown, about 15-20 minutes.
Return the cooked sausage back to the skillet along with the other recipe ingredients and mix well to combine.
Continue cooking for about 5 minutes until everything is heated through and well combined.
Taste and adjust the seasoning if necessary to your preference. Serve warm and enjoy!
Best Recipe Tips and Tricks
- Be sure to dice the potatoes into small pieces. This will ensure they cook quickly and evenly. The larger your diced potatoes, the longer they will take to cook.
- You may need to adjust the oil measurement depending on the kind of sausage used. For turkey and chicken sausage, use the 2 tablespoons. For beef or traditional pork sausage, you may only need 1 tablespoon of oil.
- Use a large nonstick skillet, cast iron skillet, or cast iron brasier as shown in the photos. You will need a large skillet to hold all of the ingredients and to be able to stir everything together.
- Depending on the sausage used, you may need to adjust and add more or less salt, ground black pepper, and paprika.
Storage
Storage. If you have any leftovers allow them to fully cool to room temperature before storing. Transfer to an airtight container and store in the refrigerator for 3-4 days.
Reheat. When ready to serve again, reheat on the stovetop in a skillet over medium heat until warmed. You may also reheat in the microwave for a quicker option, but the sausage and potatoes will not have the same slight crispiness they get from heating on the stovetop.
Freezing. I do not recommend freezing this particular recipe as it will not hold up well. It is best enjoyed after being prepared.
