Sausage Cream Cheese Crescents is a simple casserole recipe made with just a few ingredients and comes together in minutes. It's filling, flavorful, and perfect to share with a crowd.

Breakfast is one of my favorite meals! 

It can be savory or sweet and there are so many options. However, I prefer to keep it simple and filling 

That's why casseroles and bakes make the best option because there's nothing like easy recipes especially when they can double as appetizer recipes. 

This sausage and cream cheese crescent casserole fits all of those and it's very similar to toaster scrambles. 

Let's get started!

Ingredients You'll Need

  1. Ground Breakfast Sausage - Use any ground sausage, Italian sausage, or sausage crumbles that you prefer. This ingredient will form the creamy sausage filling mixture and add savory flavor to the overall dish. I love using breakfast sausage specifically that is usually located in the refrigerated section of the grocery store by the bacon. But any savory sausage that is mild, hot, or sweet, will work. 
  2. Crescent Rolls - Provides a buttery and flaky shell to hold the filling and create the casserole. You may use regular crescent roll dough, reduced-fat crescent rolls, or crescent dough sheets. 
  3. Cream Cheese - Combines with the cooked sausage to make the filling. I love using regular full fat cream cheese, but low fat cream cheese can be used as a substitute. Remove it from the refrigerator and allow it to soften at room temperature a bit for easier mixing. 
  4. Eggs - Scrambled eggs are cooked and added to the filling and used in an egg wash to top the flaky crescent rolls before baking. 
  5. Salt and Ground Black Pepper - Adds flavor to the overall dish and brings out the other ingredient flavors. Adjust as needed.

How to Make Sausage Cream Cheese Casserole

Begin the breakfast recipe by preheating the oven to 375 degrees F. and grab a 9x13-inch rectangle baking dish and lightly spray it with cooking spray. You could use a rimmed sheet pan that's lined with parchment paper instead. Set it aside. 

Place a medium sized saucepan on the stovetop over medium-high heat. Add the ground sausage and break it apart into smaller pieces as it cooks. Once it browns, drain off the excess fat/oil.

Add the softened cream cheese to the cooked sausage and stir until fully combined. Turn off the heat and set it aside while you cook the eggs.

In a medium mixing bowl, add the eggs, salt, and ground black pepper. Whisk until combined. Using a medium non-stick skillet over medium heat, add the eggs and cook until scrambled. Remove from the heat and set it aside when done.

Grab the prepared baking dish and begin assembling the breakfast casserole. Roll out one of the crescent rolls dough lengthwise into the bottom of the baking dish or prepared baking sheet. Stretch it out to fully cover the bottom and pinch together the seams.

Add the sausage and cream cheese mixture and spread it out evenly on top of the crescent dough.

Add the other crescent roll sheet on top and stretch it out to completely cover the casserole. Pinch together the seams. Evenly brush the top of the casserole in an egg wash mixture.

Place the casserole into the oven to bake for 15 to 20 minutes, until golden brown.

Carefully remove the casserole from the oven and allow it to cool for about 5 to 10 minutes before using a sharp knife to cut it into large squares to serve. Serve warm and enjoy!

Recipe Tips & Tricks 

  • Feel free to adjust the ingredients to fit your taste preference. You may use any ground sausage or cream cheese that you prefer. Try also adding other seasons to the egg mixture such as garlic powder, cayenne pepper, or onion powder. 
  • You may omit the scrambled eggs if you would like and only have a sausage and cream cheese filling. 
  • For an additional layer of flavor try topping the egg layer with a layer of shredded sharp cheddar cheese. 
  • Keep a close eye on the casserole as it cooks and once it's golden brown, remove it from the oven. Ovens may vary and adjust the cooking time as needed.

Storage Tips

Storage. Cover the baking dish tightly with aluminum foil or transfer the leftovers into an airtight container and store them in the refrigerator for up to 3 days. 

Make Ahead. Try making the full recipe up to 24 hours in advance. Cover it tightly with plastic wrap or aluminum foil and store it in the refrigerator overnight. Remove it and bake it the next day according to the recipe instructions. 

Reheating. Reheat the sausage and cream cheese casserole in the oven for a few minutes at 300 degrees F. until warm or in the microwave or air fryer for a quicker option.

Freezing. The cooked recipe can also be stored in the freezer for up to a month. Remove it from the freezer the night before you're ready to serve it again to allow it to thaw overnight in the refrigerator. Reheat in the oven as normal until warm.

Ingredients
  

  • 1 pound ground breakfast sausage
  • 8 ounces cream cheese, softened
  • 4 large eggs, scrambled
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 packs refrigerated crescent rolls (8 ounces each)
  • 1 large egg white
  • 1 tablespoon water

Instructions
 

  • Begin the breakfast recipe by preheating the oven to 375 degrees F. Grab a 9x13-inch rectangle baking dish and lightly spray it with cooking spray.
  • Place a medium-sized saucepan on the stovetop over medium-high heat. Add the 1 pound ground sausage and break it apart into smaller pieces as it cooks. Once it browns, drain off the excess fat/oil.
  • Add the 8 ounces softened cream cheese to the cooked sausage and stir until fully combined. Turn off the heat and set it aside while you cook the eggs. 
  • In a medium mixing bowl, add the 4 large eggs, ¼ teaspoon salt, and ¼ teaspoon ground black pepper. Whisk until combined. 
  • Using a medium non-stick skillet over medium heat, add the eggs and cook until scrambled. Remove from the heat and set it aside when done. 
  • Grab the prepared baking dish and begin assembling the breakfast casserole. Roll out one 8 ounce roll of crescent dough lengthwise into the bottom of the baking dish or prepared baking sheet.
  • Stretch it out to fully cover the bottom and pinch together the seams. Add the sausage and cream cheese mixture and spread it out evenly on top of the crescent dough. 
  • Top the sausage mixture with the scrambled eggs and spread them out in an even layer. Add the other 8 ounce roll of crescent dough on top and stretch it out to completely cover the casserole. Pinch together the seams.
  • Evenly brush the top of the casserole in an egg wash (whisk together 1 egg white + 1 tablespoon water) mixture and plate the casserole into the oven to bake for 15 to 20 minutes, until golden brown. 
  • Carefully remove the casserole from the oven and allow it to cool for about 5 to 10 minutes before using a sharp knife to cut it into large squares to serve. Serve warm and enjoy!
