Easy No Bake Eggnog Cookies

These Easy No Bake Eggnog Cookies are the perfect dessert to make this holiday season if you love eggnog and need a quick cookie recipe that requires no baking. Chewy, creamy, and flavorful!

It's almost Christmas Eve!

If you need a quick cookie recipe to snack on while gift-wrapping, to add to the cookie exchange, or for the kids to leave for Santa, then I've got you covered.

This recipe is an easy eggnog cookie recipe that does not require using the inside of your oven or an electric mixer. However, it will require you to use the stovetop for just a few minutes. But I promise it will be painless because you will combine several ingredients into a large pot and stir.

Then you will add in a few more simple ingredients and stir a little more.

These cookies are made using quick oats, so the beginning of the recipe feels very similar to making oatmeal. Then you will scoop the cookies onto a large baking sheet and wait for them to get thick and set before eating. They have a thick and chewy texture from the addition of the oatmeal. They are the perfect combination of everything you love about eggnog with your favorite eggnog and the spice of ground nutmeg.

Trust me you will not be disappointed in this Christmas season recipe and Santa is sure to love them! 😉

What Ingredients For Soft Eggnog Cookies

  1. Granulated Sugar - Use granulated sugar or cane sugar to make the cookies slightly sweet. 
  2. Brown Sugar - You can use either light brown sugar or dark brown sugar, either will work. Add rich and sweet flavor to the cookies with the addition of molasses. 
  3. Butter - Salted butter or unsalted butter will both work for this recipe. Use what you have on hand. Melts with the base ingredients to form the cookie mixture. 
  4. Eggnog - Use any brand from the grocery store of your favorite eggnog for this recipe. Any leftover eggnog can be used to add the creamy eggnog flavor and make the cookies thick and chewy. Heavy whipping cream could be used instead in the same unit of measure. 
  5. Ground Nutmeg - This warm spice brings out the eggnog flavor, be sure not to omit using this ingredient. 
  6. Instant Vanilla Pudding - A small box is needed, make sure it is instant and not the one that requires cooking. This ingredient helps the cookies to set and adds a slight vanilla flavor. 
  7. Vanilla Extract - Add vanilla flavor, use pure vanilla extract and not imitation vanilla. Rum extract could be used instead. 
  8. Quick Oats - Make sure that you're using quick oats or quick cooking oats and not rolled oats or steel cut oats for best results. Helps the cookies to bind together and is commonly used in no bake cookie recipes.

How To Make Eggnog Cookies

Begin making this easy dessert by using a large pot or saucepan over medium heat. Add the granulated sugar, brown sugar, butter, eggnog, and ground nutmeg. Use a large spoon to stir the eggnog mixture. Allow it to come to a low boil and then allow it to continue to boil for 2 minutes, stirring constantly.

Carefully remove the pot from the stovetop and stir in the instant pudding mix until it is thoroughly combined. Stir in the vanilla extract and quick oats. Allow the cookie mixture to sit undisturbed for about 5 minutes to thicken.

Spoon or scoop the cookie dough and place the cookie form onto a large baking sheet lined with parchment paper. Use your hands to gently flatten the tops of the cookies.

Place the cookies in the refrigerator for about 30 minutes to allow them time to set (harden). Serve and enjoy!

Recipe Tips & Tricks

  • Use a small or medium-sized cookie scoop to place the cookies on the cookie sheet. 
  • Allow these cookies time to fully cool before serving. This will ensure the cookies are fully set and will not completely fall apart. Keep in mind they will have cookie crumbs on them because they're made with oatmeal. 
  • These cookies are perfect for serious eggnog lovers because any eggnog can be used including homemade eggnog, dairy-free eggnog, or even vegan eggnogs. 
  • If you would like to use less sugar in the recipe or a sugar substitute, it will work just as well. Since these are no-bake cookies, they are easy to customize. 
  • If you prefer to use a different instant pudding, other than vanilla, feel free to do so.

Storage

Store the cookies in an airtight container or plastic storage bag at room temperature for up to 5 days. No need to store these in the refrigerator, but you can if you prefer.
