  1. Ribeye steak (or shaved beef): Ribeye is the classic choice for cheesesteaks because it's naturally well-marbled and cooks up incredibly tender. If your store carries pre-sliced ribeye or shaved beef steak, grab that, it saves you a step. Any thinly sliced steak will work here, including sirloin or even budget-friendly top round.
  2. Onion: Yellow or white onion works best. Slice it thin so it softens evenly with the beef under pressure. Avoid red onion, it can turn the broth a bit bitter.
  3. Green bell pepper: Green peppers have a slightly more assertive flavor than red or yellow, which stands up beautifully to the beef. That said, any color bell pepper works if that's what you have. A reader even swapped them out for mushrooms with great results!
  4. Salt, black pepper, and garlic powder: This simple trio is all the seasoning the filling needs. Freshly ground black pepper makes a difference here if you have it.
  5. Beef broth: The broth creates the steam the pressure cooker needs and keeps everything moist and flavorful. Low-sodium broth is fine. You can always adjust the salt level at the end.

  7. Hoagie or sub rolls: You want a roll that's sturdy enough to hold the filling but soft on the inside. A quick broil before loading it up makes all the difference.

How to Make Instant Pot Philly Cheesesteak

Step 1: Layer the Filling in the Pot

Add your thinly sliced steak directly to the bottom of the Instant Pot. Top with sliced onion and green bell pepper strips, then season everything evenly with salt, pepper, and garlic powder. No need to stir, the layering method works perfectly here. Pour in the beef broth.

Step 2: Pressure Cook

Seal the lid and make sure the valve is set to sealing (not venting, an easy mistake to make!). Cook on Manual/High pressure for 3 minutes. The pot will take a few minutes to come up to pressure before the countdown begins, that's completely normal.

Step 3: Quick Release and Serve

Once the timer goes off, use the quick-release function to vent the steam. Carefully remove the lid once the float valve drops. Your kitchen is going to smell incredible at this point. Use a slotted spoon to scoop the filling onto your rolls, add cheese slices, and pop them open-faced under the broiler for 2-3 minutes until the cheese is melted and bubbly.

Step 4: Toast the Rolls (Don't Skip This!)

Before or after adding the filling, place your rolls cut-side up on a baking sheet and slip them under the broiler for 1-2 minutes. This quick step gives the bread a lightly crisp surface that holds up to the juicy filling without getting soggy.

LaKita's Expert Tips

  • Freeze the steak for 20-30 minutes before slicing - If you're starting with a whole ribeye rather than pre-sliced beef, pop it in the freezer for a short time first. Partially frozen beef slices into thin, even strips much more easily.
  • Don't skip the quick release - For this recipe, quick release is correct. Natural release would overcook the thinly sliced steak and turn your peppers to mush.
  • Watch that valve setting - The most common Instant Pot mistake is accidentally leaving the valve on venting instead of sealing. It'll never come to pressure and you'll wonder what went wrong.
  • Broil the rolls - A minute or two under the broiler transforms a soft hoagie roll into something that can actually hold all that filling. Brush the cut sides with a little butter before broiling for extra flavor.
  • Drain some broth before serving - After pressure cooking, the filling will have quite a bit of liquid in the pot. Use a slotted spoon to scoop the filling so your sandwich isn't soggy.
  • Layer, don't stir - Resist the urge to mix everything together before cooking. The layering method allows the steak to sit in the broth while the veggies steam on top, which keeps the peppers from going mushy.
  • Double the batch - The filling freezes beautifully. Make a double batch and freeze the extra meat in individual portions for a fast future meal.

Variations & Substitutions

  • Swap the beef cut: Ribeye is classic, but sirloin, top round, or even chuck steak all work well in the pressure cooker. Tougher cuts actually benefit from the moist pressure-cooking environment and become quite tender.

To reheat from the fridge, warm the filling in a skillet over medium heat with a splash of beef broth to add moisture, stirring occasionally, for about 3-5 minutes until heated through. For a quick option, microwave in 60-second intervals, stirring between each, until hot. Always store and reheat the filling separately from the bread to prevent soggy rolls.

What is the best cheese for Instant Pot Philly Cheesesteak?

Provolone is the top choice for this recipe because it melts smoothly, has a mild flavor that doesn't overpower the beef, and has a satisfying pull. White American cheese is a great runner-up. It melts even more easily and gives a slightly creamier result. Cheese Whiz is the truly traditional Philadelphia choice if you want to go authentic! Just avoid mozzarella, it can get stringy and doesn't melt quite as evenly.

What cut of steak is best for Philly cheesesteak?

The actual pressure cook time is just 3 minutes, but you'll need to account for the time it takes the pot to come up to pressure (usually 8-10 minutes) plus a couple of minutes to assemble. Start to finish, you're looking at about 15-20 minutes total, which is faster than most takeout.

Do you need to brown the meat first?

Not for this recipe! One of the advantages of this particular approach is that you skip the sauté step entirely and let the pressure cooker do all the work. The result is incredibly tender beef that has absorbed all the flavor from the broth and seasonings. If you want a deeper, more caramelized flavor, you can sauté the steak in a little butter using the Sauté function before pressure cooking, but it's truly not necessary.

Can you make this in a different size Instant Pot?

Yes. This recipe works in a 6-quart or 8-quart Instant Pot with no adjustments. If you're using a 3-quart mini, cut the recipe in half. The cook time stays the same regardless of size.

What kind of bread is best for Philly cheesesteak?

  • 1 pound ribeye steak, trimmed and thinly sliced
  • ½ medium onion, thinly sliced
  • 2 medium green bell peppers, cut into strips
  • ½ teaspoon salt

Instructions

    This was great!! I love the idea of using my Instant Pot in summer months when I don't want to heat up the house with the stove, but I have had a hard time finding recipes that don't turn the veggies to mush.
