No Bake Eggnog Cheesecake

No Bake Eggnog Cheesecake is rich, decadent, and creamy. A simple eggnog cheesecake made with a graham cracker crust plus a few other ingredients. It's sure to be your new favorite holiday dessert.

It's getting closer and closer to Christmas!

I am so ready and already in the process of planning my Christmas day menu, especially the dessert.

This time of year things are hectic between holiday parties, gift shopping, and managing regular daily life. It is a lot. Any way that I can simplify things for myself, I am in. Enter in a no-bake dessert that uses my favorite seasonal ingredient, eggnog.

This recipe is creamy, simple to make, and perfectly rich to share with friends and family. It takes minutes to whip up and uses a ready-made graham cracker crust that only requires minimum prep to be ready to enjoy after your holiday dinner this busy holiday season. Trust me, you want to give this recipe a try soon.

What Ingredients Are Needed For This No Bake Eggnog Cheesecake Recipe?

  1. Graham Cracker Crust - The cheesecake base made with graham crackers or graham cracker crumbs. Brush the classic graham cracker crust with egg wash, bake it for 5 minutes, and allow it to cool before filling. A gingersnap crust made with gingersnap cookies could be used instead. 
  2. Heavy Whipping Cream - Mix until stiff peaks form, this ingredient helps to hold the filling together and thicken the cheesecake filling. Cool Whip or whipped topping could be used instead as long as it is not frozen and has had time to thaw. 
  3. Cream Cheese - Use full fat cream cheese for this cheesecake recipe. Allow it to soften a bit to room temperature for easier mixing.
  4. Powdered Sugar - Sweetens the easy dessert cheesecake and combines well with the other ingredients.
  5. Eggnog - The star ingredient that provides delicious eggnog flavor, use your favorite! Dairy free creamy eggnog will work as well. 
  6. Vanilla Extract - Adds slight vanilla flavor. Use pure vanilla extract and not imitation vanilla for the best flavor. Rum extract could be used instead in the same unit of measure. 
  7. Ground Nutmeg - Warm and nutty spice that brings out the eggnog flavor. 
  8. Ground Cinnamon - A slightly sweet and warm spice that pairs well with the other ingredients, do not omit this ingredient.

How To Make Eggnog Cheesecake

This cheesecake recipe begins by preparing a ready-crust graham cracker pie crust. Brush the unbaked crust all over with a beaten egg and bake it according to the package instructions for about 4 to 5 minutes. Allow it to fully cool before filling with the cheesecake mixture. 

Use a stand mixer with a whisk attachment or paddle attachment or a large mixing bowl with an electric hand mixer on medium-high speed. Add the heavy cream and mix it until stiff peaks form. Stop, turn the mixer off, and remove the whipped cream from the mixing bowl into a separate large bowl. Set it aside.

To the mixer bowl, add the softened cream cheese and mix on medium speed until it is soft, creamy, and smooth. Add the powdered sugar, your favorite eggnog, vanilla extract, ground nutmeg, and ground cinnamon. Mix until combined.

Add the whipped cream back to the electric mixer bowl with the other ingredients and continue mixing until fully combined, creamy, and smooth.

Pour the filling into the prepared graham cracker pie crust, cover, and place it into the refrigerator.

Allow the eggnog cheesecake time to set in the refrigerator for at least 3 hours and up to overnight. Remove the creamy cheesecake from the refrigerator and use a sharp knife to slice it to serve. Enjoy!

Recipe Tips & Ticks 

  • Allow the cream cheese to come to room temperature before adding it to the mixer. It will be easier to work with and prevent lumps to give you a smooth cheesecake filling. Just take it out of the refrigerator for 5 to 10 minutes before beginning to make the eggnog dessert.
  • If using the ready-crust graham crust, you will have to bake it for 4 to 5 minutes and allow it to cool before filling. You may also find a graham cracker crust that's ready to go and requires no baking, check the bakery section at your grocery store. 
  • Mix the heavy whipping cream separately until it forms stiff peaks before combining it with the other ingredients. Skipping this step will result in your cheesecake not setting properly. 
  • Use full-fat cream cheese. The one that comes in the rectangle block will work the best because it allows the cheesecake filling to set and thicken.

​Storage

Storage. This cheesecake is best to be kept cool and stored in the refrigerator. If you need to leave it at room temperature for a short amount of time, then it should be fine for 1 to 2 hours. After that place it in the refrigerator and allow it to remain cool. 

Refrigerator. Store any leftover or uneaten cheesecake in the refrigerator for up to 5 days. 

Freezing. This cheesecake can be stored in the freezer for up to 3 months. When ready to serve it, transfer it to the refrigerator and allow it to thaw overnight before serving.

  • ½ cup heavy whipping cream

      Yes, you can freeze it just as you would regular cheesecake.
