Instant Pot Chicken and Potatoes with Green Beans

This Instant Pot Chicken and Potatoes with Green Beans is a complete and comforting meal in minutes. It's loaded with flavor, comforting, and delicious. Try it for your next meal!

Y’all! I may be late to the Instant Pot/Pressure Cooker team, but when I tell you I’m glad that I am here. I’m so glad I made the decision to purchase one and begin using it. It truly saves me so much time in the kitchen. 

When it comes to cooking in the pressure cooker, I do not want to pull out anything else. No other pots or pans. Everything in the Instant Pot. All the ingredients! 

This leads me to the recipe that I will be sharing with you today. It has become a new favorite and I have made it every week for the past month. It's chicken, potatoes, and green beans. So delicious and worth giving a try. 

Let's get started!

What Ingredients Are Needed For This Dinner Recipe?

  1. Chicken - Boneless skinless chicken breasts work best for this particular chicken recipe. Skinless chicken thighs or boneless chicken breasts could be used as a substitute. 
  2. Potatoes - Any baby potatoes will work. I prefer to use red potatoes, Yukon gold potatoes, or a baby potatoes blend. If you prefer to use larger potatoes such as Russet potatoes, they will work as well just cut them into small 1-in cube pieces before adding to the pot. Sweet potatoes may also be used.  
  3. Fresh Green Beans - Be sure to use fresh green beans that can be easily located in the produce section of the grocery store. They work the best and remain slightly firm while cooking under pressure. I do not recommend using canned green beans or frozen green beans for this recipe. 
  4. Ranch Seasoning Mix - Seasons the chicken, potatoes, and green beans with a savory, herb, and slightly tangy flavor. Zesty Italian dressing mix can be used instead. 
  5. Salt - Adds flavor to the chicken and prevents it from tasting bland and flat, may be adjusted according to your preference. Any salt that you prefer can be used including kosher salt. 
  6. Ground Black Pepper - Gives the chicken breasts a peppery and slightly spicy flavor. Try using freshly cracked (ground) black pepper.

How To Make Instant Pot Chicken and Potatoes

Begin the easy recipe by placing the trivet at the bottom of the electric pressure cooker and add a cup of water. Place the seasoned chicken at the bottom of the pressure cooker on one side.

Place the potatoes on the other side, opposite side of the chicken.

Top with the fresh green beans. The green beans may be placed in a steamer basket as well for easier removal. Just be sure to divide the ranch seasoning mix between the ingredients in the basket and the inner pot.

Evenly sprinkle the ranch seasoning mix on top of all of the ingredients in the inner pot.

Put the top on the instant pot. Double check to make sure the quick release valve is set to sealing and not venting. Cook using the manual setting or pressure cook option. Press the Manual button or Pressure Cook button on the Instant Pot. Set the cooking time to five minutes. Allow the instant pot to naturally release for five minutes when the cook time is up.

*If your Instant Pot or pressure cooker has a low or high-pressure setting, use the high-pressure setting or manual high pressure option for this recipe.

Using the handles of the trivet or tongs, carefully remove and separate/serve the chicken, potatoes, and green beans. Serve warm and enjoy!

Before serving, top with a sprinkle of grated parmesan cheese or a squeeze of lemon juice or lime juice.

Tips to Make the Best Instant Pot Chicken Potatoes and Green Beans

  • Place the trivet in the bottom of the pressure cooker before adding any ingredients
  • May use any kind of potatoes. I’ve also cut russet potatoes into small pieces and used them as well. 
  • Season the chicken with salt and pepper or a little of the ranch seasoning mix. 
  • May substitute the boneless chicken breasts for boneless chicken thighs. 
  • This recipe could also be completed in a slow cooker using the same process. Just cook on low for 6 to 8 hours or high for 4 hours, depending on your slow cooker. 

Recipe Variations

  • Instead of using ranch seasoning mix, use Zesty Italian dressing mix in the same unit of measure. 
  • Try using sweet potatoes instead of regular potatoes. 
  • In addition to the ranch seasoning mix add some French onion soup mix as well for additional flavor. 
  • Instead of using a cup of water, try using chicken broth, chicken stock, or even bone broth. 
  • Season the chicken any way that you prefer. Add garlic powder, seasoning salt, and red pepper flakes instead. 
  • Chop up a small onion or green or yellow pepper and add it in with the potatoes. 

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When ready to serve again simply heat in the oven at 300 degrees F. until warmed or reheat in the microwave for a quicker option.

Ingredients
  

  • 1 cup water
  • 1 ½ pounds boneless skinless chicken breasts (or thighs)
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 ½ pounds baby potatoes, cut into smaller pieces
  • 12 ounces bag fresh green beans
  • 1 1 oz. packet ranch seasoning mix (not the dip packet)

  • Place the 1 ½ pounds cut potatoes on the other side, opposite side of the chicken. 
  • Top with 12 ounces fresh green beans. The green beans may be placed in a steamer basket as well for easier removal. Just be sure to divide the ranch seasoning mix between the ingredients in the basket and the inner pot. 
  • Evenly sprinkle the 1 ounce packet ranch seasoning mix on top of all of the ingredients in the inner pot.

    I tried this recipe today and it was perfect. I used chicken wings since I didn't have chicken breasts. I also used new potatoes and 2 bags of frozen green beans. I set pressure cooker for 6 minutes and did pressure release after 5 minutes and it was delicious. Thanks for and easy one pot meal.

    I am using cubed chicken. If I use the trivet the chicken falls through. Can I use the steamer basket (It's solid on the sides and woven on the bottom) and get the same results in the same amount of time?

    This recipe looks great! I'm planning to make it this week and was wondering about the potatoes. The recipe says 6 medium but it looks like new potatoes are used in the pictures. How many (or what weight) of new potatoes would you use?
