  • Mango - Sweet, juicy, and perfectly ripe. A ripe mango gives slightly when you press it (like a ripe avocado) and smells fragrant at the stem end. Skin color varies by variety, so trust the feel and the smell more than the color.
  • Pineapple - Fresh is best. A ripe pineapple is golden at the base, smells sweet at the bottom, and a center leaf pulls out with just a gentle tug. Dice it to match the mango pieces for consistent texture.
  • Red Onion - Adds color and a sharp bite that keeps all that fruit honest. White onion or shallot work as substitutes.
  • Jalapeño Pepper - Brings the heat. Remove the seeds and ribs for a milder salsa, or leave a few in if your crowd likes a kick.
  • Tomato - My secret to a salsa that still tastes like salsa. It adds a touch of acidity and classic body that most fruit salsas are missing.

How to Make Pineapple Mango Salsa

Step 1: Prep Your Fruit

Peel the mango and slice the flesh away from the flat pit, then dice it small. For the pineapple, slice off the top and bottom, stand it up to trim the skin, quarter it, remove the core, and dice. Aim for pieces about the same size, around a quarter inch, so every scoop gets a little of everything.

Step 2: Tame the Heat

Slice the jalapeño lengthwise and scrape out the seeds and ribs with a spoon before mincing. That's where most of the heat lives. If you like it spicier, mince a few seeds right back in. And do yourself a favor: wash your hands well (or wear gloves) before touching your eyes.

Add the diced mango, pineapple, red onion, jalapeño, tomato, and cilantro to a large mixing bowl. Stir gently with a wooden spoon or rubber spatula. You want to combine, not crush. Ripe fruit is delicate, and a heavy hand turns salsa into slush.

  • Buy your mango a few days ahead. If the store only has firm mangoes, let them ripen on the counter for 2-3 days. A rock-hard mango will make a bland, crunchy salsa.
  • Drain juicy tomatoes. If your tomato is very ripe, scoop out the seeds and jelly before dicing so the salsa doesn't turn watery.
  • Stir again right before serving. The lime and fruit juices settle at the bottom of the bowl, one quick remix redistributes all that flavor.
  • Make it the star of taco night. Readers consistently tell me this salsa shines brightest on fish and shrimp tacos. The sweet fruit against blackened or fried fish is unbeatable.

Make-Ahead

You can dice the mango, pineapple, onion, and jalapeño up to a day ahead. Store them together in an airtight container in the refrigerator. Hold the tomato, cilantro, lime, and salt until just before serving so nothing gets watery or wilted. Then it's a two-minute stir when company arrives.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for 2-3 days. The fruit softens and releases juice as it sits, so give it a good stir (and drain a little liquid if needed) before serving again. No reheating here. This salsa is served fresh or chilled, never warm. Freezing is not recommended, the fruit turns mushy when thawed.

Yes! In fact, it benefits from 20-30 minutes of chill time so the flavors can marry. For anything longer than a few hours ahead, prep the fruit and vegetables in advance but hold the lime, salt, and cilantro until closer to serving so the salsa stays fresh and bright.

Can I use canned or frozen fruit?

Fresh fruit really makes a difference here. Canned pineapple tends to be too soft and sweet, and it waters down the texture. Frozen mango can work in a pinch. Thaw it completely and pat it dry first, but fresh, ripe fruit gives you the best flavor and texture by far.

Is pineapple mango salsa spicy?

It has a mild, friendly kick. Removing the jalapeño's seeds and ribs keeps it gentle enough for the whole family, while leaving some seeds in (or swapping in a serrano) turns up the heat for spice lovers.

Why does my salsa taste bland?

Nine times out of ten, it needs more salt. Salt is what unlocks the sweetness of the fruit and ties everything together. Underripe fruit is the other culprit, if your mango or pineapple was firm and flavorless going in, a small drizzle of honey can help.

Can I leave out the tomato?

You can, the salsa will just lean sweeter and more tropical. I keep the tomato in because it adds a touch of acidity and that classic salsa feel most fruit salsas are missing, but the recipe works fine without it.

Ingredients
  

  • 1 cup fresh mango, diced
  • 1 cup fresh pineapple, diced
  • ¼ cup red onion, finely diced
  • ½ cup tomato, diced
  • 1 whole jalapeno, seeded and minced
  • ¼ cup fresh cilantro, chopped
  • juice of 1 lime
  • ½ teaspoon salt

Instructions
 

  • This recipe is easy to make but requires a bit of prep work to prepare the fresh produce ingredients. Begin by cleaning and chopping or dicing everything into small pieces using a sharp knife.
  • To minimize the spicy flavor of the jalapeno pepper, remove the seeds and ribs before dicing. You may also try to remove as many seeds as you can from the tomatoes if you prefer. 
  • Using a large mixing bowl, add 1 cup diced mango, 1 cup diced pineapple, ¼ cup red onion, 1 whole minced jalapeno pepper, ½ cup diced tomato, and ¼ cup chopped cilantro. Using a wooden spoon or rubber spatula, gently stir to combine.
