There's a very specific kind of summer day when I find myself standing in the kitchen with a bowl of fresh peaches in one hand and a pint of cherry tomatoes I grabbed at the farmers market in the other, and I just know what needs to happen. This salad was born out of one of those exact moments. A busy July afternoon when I wanted something fresh and beautiful on the table without heating up the kitchen. One bowl, a handful of ingredients, and ten minutes later, this tomato peach salad has become one of my most-made summer recipes.

What I love most about this combination is how surprising it is the first time you try it. Tart tomatoes and sweet, juicy peaches sound like an unlikely pair, but that contrast is exactly what makes this salad so special. Add a little fresh mint, a drizzle of olive oil and apple cider vinegar, and a crumble of tangy goat cheese on top. Y'all, it is summer in a bowl.

  1. Cherry Tomatoes - Cherry tomatoes are ideal here because their small size and concentrated flavor balance the sweetness of the peaches perfectly. Halving them helps them release just enough juice to mingle with the dressing. Grape tomatoes work equally well, and if you have heirloom tomatoes on hand, they're a gorgeous and flavorful swap.
  2. Fresh Peaches - Ripe, in-season peaches are the star of this salad. I've used both white peaches and yellow peaches and both are delicious. White peaches tend to be a little sweeter and less acidic. The most important thing is that your peaches are ripe. Ripe peaches should give slightly when pressed. Avoid canned or frozen peaches for this recipe, the texture won't hold up.
  3. Olive Oil - A good quality extra virgin olive oil is all you need for the dressing here. It brings the ingredients together and adds a subtle richness without overpowering the fresh flavors.
  4. Apple Cider Vinegar- This adds just enough brightness and acidity to balance the sweetness of the peaches. If you don't have apple cider vinegar on hand, white wine vinegar or a squeeze of fresh lemon juice works well as a substitute.
  5. Fresh Mint - Chopped fresh mint gives this salad an unexpected coolness that makes it feel extra refreshing on a hot summer day. Fresh basil is a wonderful alternative if mint isn't your thing, it gives the salad more of a caprese-style flavor.
  6. Goat Cheese - Crumbled goat cheese adds a creamy, tangy element that ties everything together. It melts slightly into the dressed salad and creates these little pockets of richness in every bite. Feta cheese is a great swap if you prefer a saltier, brinier flavor.
  7. Sea Salt & Ground Black Pepper - Season generously! Especially the tomatoes, which benefit from being salted first to draw out their juices.

How to Make Tomato Peach Salad

Here's a quick overview of the process. Full step-by-step instructions are in the recipe card below.

Step 1: Salt the Tomatoes

Halve your cherry tomatoes and add them to a large mixing bowl with a pinch of sea salt. Give them a gentle stir and let them sit for a minute or two. This step draws out the tomatoes' natural juices, which become part of your dressing, so don't skip it. The liquid that pools in the bowl is full of flavor.

Step 2: Add the Peaches and Dressing

Slice your peaches and add them to the bowl along with the olive oil, apple cider vinegar, and chopped fresh mint. Stir everything together gently. You want to combine the ingredients without breaking the peach slices down too much, a few gentle folds is all it takes.

Step 3: Taste and Adjust

Before adding the cheese, taste your salad. Add more salt and black pepper as needed. The balance of sweet, tart, and savory is what you're going for. If it tastes like it needs a little more brightness, another small splash of vinegar will do the trick.

Step 4: Top with Goat Cheese and Serve

Crumble the goat cheese over the top of the salad just before serving. The cheese is added last, so it doesn't break down and disappear into the dressing. You want those visible crumbles on top for texture and presentation. Serve immediately for the best flavor.

LaKita's Expert Tips

Here are my best tips for making this recipe turn out perfectly every time.

  • Use the ripest peaches you can find. Underripe peaches are firm and starchy, they won't have the sweetness that makes this salad sing. Peak peach season runs June through August in most of the South, and that's when this recipe is at its absolute best.
  • Let the tomatoes sit with salt first. Even just two minutes of salting before adding the other ingredients makes a real difference. The salt pulls out the tomatoes' natural juice and gives you more liquid in the bowl to work with as a base for your dressing.
  • Add goat cheese at the very end. If you add it too early and toss it in, the cheese will dissolve into the dressing. Keep it on top for the best texture and presentation.
  • Don't substitute frozen or canned peaches. The texture turns mushy when it hits the acidic dressing, and the flavor can't compete with fresh. Fresh only for this one.
  • Slice peaches just before serving. Cut peaches oxidize and turn brown quickly. For the prettiest presentation, slice them right before you're ready to serve.
  • Taste your peaches before you start. If they're very sweet, you may want to add a little more vinegar to balance. If they're on the tart side, skip the extra vinegar.
  • Use a wide, shallow serving bowl. The tomatoes and peaches look beautiful layered in a wider bowl, and it makes it easier to portion out servings without crushing the peach slices at the bottom.

Variations & Substitutions

This recipe is flexible, here are some easy ways to make it your own.

  • Swap goat cheese for burrata or feta. Burrata gives the salad a more luxurious, creamy texture and is stunning on a platter for a dinner party. Feta adds a salty, briny kick that pairs wonderfully with the sweet peaches.
  • Use fresh basil instead of mint. Basil transforms this into something closer to a peach caprese, it's beautiful and just as delicious. You can also use a combination of both herbs.
  • Try heirloom tomatoes. If you can find colorful heirloom tomatoes at your farmers market, use them. The variety of colors makes this salad look absolutely gorgeous on a summer table.
  • Add nectarines or plums. Both work in place of (or alongside) peaches. Nectarines have a slightly firmer texture that holds up well. Ripe plums add a deeper, more complex sweetness.
  • Add a balsamic glaze drizzle. Instead of (or in addition to) the apple cider vinegar, drizzle a balsamic reduction over the finished salad for a richer, slightly sweet finish.
  • Serve on a bed of arugula. For a heartier salad that works as a light main course, arrange the tomato peach mixture over a bed of peppery baby arugula. The arugula stands up well to the juicy dressing.

Make-Ahead & Storage

Make-Ahead

This salad is best assembled fresh, but you can prep the components ahead of time. Wash and halve the tomatoes, slice the peaches (toss them with a tiny squeeze of lemon juice to prevent browning), and chop the mint. Store each component separately in airtight containers in the refrigerator for up to 4 hours before serving. Mix everything together right before serving and add the goat cheese on top at the last moment.

Storage & Reheating

If you have leftovers, store the dressed salad in an airtight container in the refrigerator for up to 1 day. After the first day, the peaches will soften significantly and the tomatoes will continue releasing liquid. The salad is still edible, but it becomes softer in texture. This recipe is not suitable for freezing.

What to Serve with Tomato Peach Salad

Here are some of my favorite ways to serve this dish.

  • Grilled chicken - The bright, fruity flavors of this salad are a natural match for simple grilled or pan-seared chicken. It doubles as both a side dish and a sauce.
  • Grilled or pan-seared pork chops - Try it alongside Peachy Salsa Pork Chops for a full summer peach dinner that's packed with seasonal flavor.
  • Shrimp or fish tacos - The fresh mint and light dressing play beautifully against grilled shrimp or flaky white fish.
  • Crusty bread or crostini - Spoon the salad over toasted crostini as a summer appetizer. The juices soak into the bread and it's absolutely incredible.
  • As a light lunch - Serve it on its own with Sautéed Garlic Spinach on the side for a quick, no-cook summer meal. Also try pairing it with a side of your favorite cooked pasta topped with some Homemade San Marzano Tomato Sauce.

Frequently Asked Questions

Can I make this tomato peach salad ahead of time?

This salad is best served fresh, but you can prep all the components up to 4 hours in advance and store them separately in the refrigerator. Combine and dress the salad right before serving and add the goat cheese on top at the last minute. Once dressed and assembled, it's best eaten the same day.

Can I use canned or frozen peaches for this recipe?

I'd strongly recommend sticking with fresh peaches for this one. Canned peaches are packed in syrup and too sweet, and frozen peaches turn soft and watery when thawed. The texture of this salad depends on the firmness and juiciness of fresh, ripe peaches. If fresh peaches aren't in season, wait, it's worth it.

What kind of tomatoes work best in this salad?

Cherry tomatoes and grape tomatoes are my go-to because they're small enough to eat in one or two bites and have great concentrated flavor. That said, heirloom tomatoes are gorgeous in this recipe if you can find them, slice them into wedges for a beautiful presentation

Can I substitute a different cheese for goat cheese?

Absolutely! Crumbled feta is a great swap if you want something saltier and briner. Fresh burrata torn over the top makes this salad feel extra indulgent and is perfect for entertaining. Fresh mozzarella works well too for a caprese-inspired twist. If you're dairy-free, simply leave the cheese off, the salad is still delicious without it.

What can I use instead of apple cider vinegar?

White wine vinegar, red wine vinegar, or a squeeze of fresh lemon juice all work beautifully here. If you want a slightly sweeter dressing, a small drizzle of balsamic glaze is also delicious. Start with less and taste as you go, you can always add more acidity but can't take it away. You could also make my Hibachi Ginger Dressing as an alternative and drizzle it on instead.

Can I add fresh herbs besides mint?

Yes! Fresh basil is probably the most popular swap, it gives the salad a caprese-style flavor that's wonderful with the peaches and goat cheese. You can also use a combination of mint and basil for the best of both worlds. Fresh thyme is another subtle option that adds a savory depth. Dried herbs won't give you the same freshness, so try to use fresh if at all possible.

Is this salad healthy?

Yes, it's a light, nutrient-dense dish that's naturally gluten-free. Fresh peaches and tomatoes are high in vitamins C and A, and the olive oil provides heart-healthy fats. At about 91 calories per serving (before any optional cheese additions), it's a great low-calorie summer side.

How do I pick a ripe peach for this recipe?

A ripe peach should have a little give when you press it gently near the stem, it shouldn't be rock hard. Look for peaches with a deep yellow or orange color under the skin (the red "blush" is just where the sun touched it, not a ripeness indicator). A ripe peach will also smell sweet and fragrant. If your peaches are still firm, leave them at room temperature for a day or two to ripen before using them in this salad.

Can I add anything to make this salad more filling?

Definitely! Serving it over a bed of arugula or mixed greens turns this into a heartier salad that works as a light lunch. You can also add sliced avocado, grilled corn cut from the cob, or even some toasted pecans for crunch. Grilled shrimp or sliced grilled chicken on top makes it a full meal.

What's the best way to slice peaches for this salad?

First, run a knife around the pit from top to bottom following the natural seam. Twist the two halves apart, then remove the pit with a spoon. Lay each half cut-side down and slice into wedges. The thinner the slices, the more surface area you get for the dressing to coat. I aim for about ½-inch thick slices.

    I love the addition of peaches in my salad but I never add them on my own, I usually leave that up to restaurants. But I’m always in the mood for a tomato based salad especially topped with a little goat cheese. Can’t wait to try this recipe Lakita 🙂
