Easy Greek Chicken Salad

Try making this Greek Chicken Salad that is hearty and full of flavor. Made with fresh mixed greens, tomatoes, green peppers, cucumbers, red onion, kalamata olives, feta cheese, and topped with a delicious dressing.

Ingredients

Chicken Marinade: – 1 ½ pounds chicken breasts, boneless skinless – 1 tablespoon olive oil – 1 clove garlic, minced – 1 small lemon, juice & zest – 1 tablespoon Greek seasoning – 1 tablespoon fresh parsley, chopped – ½ teaspoon salt – ½ teaspoon ground black pepper

Greek Salad: – 6 cups mixed salad greens – ½ cup green bell pepper, chopped – 1 cup cherry tomatoes, halved – 1 cup cucumber, diced – ½ cup red onion, diced – ¼ cup Kalamata olives, chopped – ¼ cup feta cheese, crumbled

Ingredients

Dressing: – 1 tablespoon olive oil – 1 tablespoon white wine vinegar – Juice of ½ a lemon – ½ tablespoon fresh parsley, chopped – 1 teaspoon honey – ½ teaspoon Greek seasoning – ½ teaspoon salt – ½ teaspoon ground black pepper

Begin the recipe by making the marinade for the chicken. In a large plastic bag combine the marinade ingredients, then put the chicken breasts in the bag and let marinate for 30 minutes.

While marinating, add all of the salad ingredients to a bowl and combine.

Make the salad dressing in a mason jar so that you can shake to combine.

 Preheat the oven to 400 degrees F. Place a large oven-safe skillet on the stovetop over medium-high heat. Add the olive oil and chicken.

Allow the chicken to cook untouched for 5 minutes before turning it over. After turning, place it in the oven to bake for 15 minutes.

Assemble the salad by adding the vegetable mixture, chicken, and salad dressing together in a bowl. Serve and enjoy!
