Greek Salad:
– 6 cups mixed salad greens
– ½ cup green bell pepper, chopped
– 1 cup cherry tomatoes, halved
– 1 cup cucumber, diced
– ½ cup red onion, diced
– ¼ cup Kalamata olives, chopped
– ¼ cup feta cheese, crumbled
Dressing:
– 1 tablespoon olive oil
– 1 tablespoon white wine vinegar
– Juice of ½ a lemon
– ½ tablespoon fresh parsley, chopped
