    Roast Beef and Swiss Cheese Sandwiches

    Try making a quick and easy batch of these Roast Beef and Swiss Cheese Sandwiches. They're loaded with thinly sliced meat, melted cheese, with a tangy sauce, on a lightly toasted potato bun. Perfect to make for a quick lunch, dinner, or to feed a game day crowd.

    Every now and then I get in the mood for a good roast beef sandwich.

    But not just any ole roast beef sandwich, but on with some swiss cheese, on a lightly toasted bun, with a tangy delicious sauce. This recipe certainly fits that description and is simple to make with just a few basic ingredients.

    Ingredients You'll Need

    1. Buns - Use any brand of buns that you prefer. You can use rolls, small buns (sliders), or regular hamburger buns. This will be what holds the sandwich together. For this recipe, I'm using potato rolls.
    2. Roast Beef - Thinly sliced roast beef or shaved roast beef will be the meat that fills the sandwiches. If you prefer to substitute turkey or ham, then you may do that instead.
    3. Swiss Cheese - Mild in flavor and pairs well with roast beef. I prefer to use thinly sliced cheese, but you can use regular packaged slices as well.
    4. Mayonnaise - Adds a bit of creaminess and fat to the sauce that will be spread on the sandwiches. Use any brand that you prefer, it can be regular or the light version.
    5. Onion - Use a box grater to grate the onion into smaller pieces to combine well into the sauce. I prefer to use yellow onion, but white onion will work as well.
    6. Poppy Seeds - Adds a slightly nutty and woodsy flavor to the sauce.
    7. Spicy Mustard - Spicy brown mustard adds amazing tangy flavor to the sandwich, if you prefer to use regular mustard that will work also.
    8. Horseradish - Prepared horseradish will add some heat to the sauce and provide a tanginess to the sandwich. No worries, it will not make the sauce hot in flavor.
    9. Worcestershire Sauce - A small amount to add a bit of savory flavor that balances the flavors of the sauce and prevents it from tasting flat.

    Step By Step Instructions

    Begin the recipe by preheating the oven to 350 degrees F. Grab a medium-sized baking sheet and line it with parchment paper or lightly spray a 9x13-inch baking dish with cooking spray. Slice the rolls in half and place the bottom half of the roll on the prepared baking sheet or dish. Set aside.

    In a small bowl, stir together the mayonnaise, grated onion, poppy seeds, spicy mustard, horseradish, and Worcestershire sauce. At this point, you may taste the sauce and adjust the ingredients to your preference.

    Generously spread the sauce on top of the bottom half of the buns in the baking dish.

    Evenly top with the roast beef and Swiss cheese slices.

    Top with the other half of the bun.

    Top the baking dish with some aluminium foil and place into the oven to bake for 15 to 20 minutes. The cheese should be melted and the buns slightly crisp.

    Carefully remove the sandwiches from the oven and serve warm. Enjoy!

    Recipe Tips & Tricks

    • Try preparing the baking dish by spreading it with butter before adding the bottom of the buns.
    • These roast beef sandwiches can be made the day before and placed in the refrigerator overnight. When ready to bake allow them time to come to room temperature a bit before baking.
    • Try not to overbake the sandwiches. Bake them just enough for them to be heated thoroughly, the cheese melted, and the bun slightly crisp.
    • You may use any bread roll that you prefer. Try pretzel buns, Hawaiian buns, or onion with poppy seeds.
    • Double the sauce and add to the bottom and top of the sandwich for a more saucy sandwich.

    Variations

    • Use plain roast beef, smoked, or Cajun flavored. Any flavor that is available at your local grocery store deli counter.
    • Instead of roast beef, try substituting thinly sliced turkey or ham.
    • For sandwiches with more heat, try adding a layer of pickled jalapeno peppers on top of the layer of sauce.
    • If you prefer a tangy and sweet sauce, then add 1 tablespoon of honey or maple syrup.

    Storage

    If you have any leftover sandwiches, wrap each individual sandwich in some aluminum foil and store them in the refrigerator for up to 3 days. When ready to serve again, warm in the oven at 350 degrees F. for about 5 minutes.

    You may also store them in an airtight container in the refrigerator and reheat them in the microwave.
