    I love brownies!

Well I actually love chocolate and brownies are a version of chocolate, therefore I love brownies. Brownies especially hold a special place in my heart because they were one of the very first things that I learned to bake on my own.

My mom, being the awesome cook that she is, always kept an endless supply of flour, sugar, cocoa powder, and some form of chocolate chips on hand and all of those ingredients are exactly what you need to make up a batch of delicious brownies. Now today I find myself always having a pantry full of those same ingredients required to make brownies, so it's easy for me to whip them up in a pinch.

To me, brownies are best when they come fresh from the oven. That is the time when they are warm, moist, and chewy, and the chocolate just melts. It's also the perfect time to add a scoop of ice cream on top so it melts just enough to mesh with the warm gooey brownie to create the perfect sundae. But you may not always want a large square pan of brownies and so this recipe is perfect to make just 8 individual servings.

    Ingredients You'll Need

overhead view of ingredients needed to make brownies in separate bowls on marble surface
    1. Chocolate - The main ingredient and what makes these brownies rich and fudgy. Use any chocolate that you prefer. You may use semi-sweet chocolate chips or your favorite chocolate bar chopped into small pieces. I prefer to use baker's chocolate instead.
    2. Butter - If you use salted butter then you may omit the additional salt in the recipe.
    3. Cocoa Powder - Helps to make the brownies chewy and loaded with chocolate flavor. Use a high-quality unsweetened cocoa powder for this recipe.
    4. Sugar - Use plain white granulated sugar or cane sugar to sweeten the brownies.
    5. Eggs - Large eggs work great for this recipe.
    6. Vanilla extract - The vanilla extract helps to add a nice layer of flavor and sweetness. Use pure vanilla extract and not imitation.
    7. Salt - Helps to balance the sweet flavor and prevents the brownies from tasting flat. Use any that you prefer, I like to use kosher salt for baking.
    8. All-purpose flour - Be sure to scoop the flour into the measuring cup and level it off. Don't scoop the measuring cup directly into the bag/container or it will pack the flour. For the most accurate measurement, use a food scale.

See the recipe card below for exact ingredient quantities.

    Step By Step Instructions

Begin the brownie recipe by adjusting your oven rack to the middle position and preheat the oven to 350 degrees F. Line an 8.5 by 4.5-inch loaf pan with parchment paper or aluminium foil. If using foil, spray with non-stick cooking spray as well to ensure the release of your brownies.

In a small bowl combine the chocolate, butter, and cocoa powder and place in the microwave by setting on 30-second intervals at a time until the chocolate begins to melt, then remove and stir until the mixture is smooth. Set aside and allow to cool a bit.

In a separate small bowl, whisk together the sugar, egg, egg yolk, vanilla, and salt until combined.

Then whisk in the chocolate mixture until combined. Stir the all-purpose flour using a rubber spatula until combined.

Transfer the brownie mixture to the prepared pan and level off the surface with a small spatula or spoon.

Place into the oven and bake for 15 to 20 minutes, until a toothpick comes out clean. You may need to rotate the pan halfway through baking. Allow the brownies to cool in the pan completely before removing them. Then lifting the brownies out using the edges of the paper or foil, cut the brownies into small squares. Enjoy!

    Recipe Tips & Tricks

    • Do not over mix the batter, especially once the all-purpose flour is added to the mixture. You want to stir the mixture just until all of the ingredients are combined. If the mixture is still slightly lumpy, then it's fine. Over mixing will result in tough brownies.
    • Try not to over bake the brownies. I prefer to set a timer for about 8 to 10 minutes, then check them to see if more baking is required. You'll know when the brownies have finished baking and are ready to be removed from the oven by sticking a toothpick into the center and if it comes out with a few crumbs, they are ready. Keep in mind that brownies will finish outside the oven as they cool.
    • Allow the brownies to cool completely before cutting.

    Storage

These fudgy brownies from scratch can be stored in an airtight container or plastic storage bag at room temperature for up to 5 days. That is if they can last that long.

These brownies are just the right amount of fudginess without being too "gooey" inside. Lots of chocolate flavor and don't let them bake too long or you'll lose the fudginess!
