How to Make Candy Corn Rice Krispie Treats

Step 1: Melt the Butter and Marshmallows
Gently melt the butter in a large pot before adding the marshmallows. Stir over low heat until the mixture is smooth, taking care not to overheat it.

Step 2: Add the Cereal and Candy Corn
Remove the pot from the heat and stir in the vanilla followed by the crispy rice cereal. Fold in the candy corn last so it remains scattered throughout the mixture instead of completely melting.

Step 3: Press and Set
Transfer the mixture to a prepared pan and gently pat it into an even layer. Allow the treats to set completely before cutting them into squares or Halloween shapes.

- Use fresh marshmallows. Older marshmallows do not melt as smoothly and can make the finished treats firm or dry.
- Keep the heat low. Overheated marshmallows produce hard Rice Krispie treats. Melt them slowly and remove the pot from the heat as soon as they are smooth.
- Add the candy corn last. The mixture will be cooler after the cereal is added, which helps keep the candy corn from melting.
- Line the pan with parchment paper. This prevents sticking and makes it easier to lift out the entire batch for cutting.
- Lightly dampen or butter your hands. This keeps the sticky mixture from clinging to your fingers.
- Do not press too firmly. Gently pat the mixture into the pan. Packing it down tightly creates dense, hard treats.
- Use a greased knife. A little cooking spray or butter on the knife makes cleaner cuts.

I do not recommend freezing this version. The cereal may lose some of its crispness, and the candy corn can become sticky as it thaws.

Candy Corn Rice Krispie Treats
Equipment
- 1 large pot or saucepan
- 1 Large Sheet Pan or 9x13-inch baking pan
Ingredients
- 6 tablespoons salted butter
- 20 ounces mini marshmallows (2 10 ounce bags)
- 1 teaspoon vanilla extract
- 6 cups crispy rice cereal
- 1 cup candy corn candy
Instructions
- Prepare a large sheet pan or 9×13-inch baking dish with cooking spray or line it with parchment paper for easier cleanup. Set aside.
- In a large pot, over medium-low heat, add the 6 tablespoons salted butter and stir around until melted. Add the 20 ounces of mini marshmallows and stir continuously until melted.

- Stir in the 1 teaspoon vanilla extract and remove the pot from the heat. Immediately stir in the 6 cups crispy rice cereal until combined. During the last few seconds, stir in the 1 cup candy corn candy until distributed

- Add the mixture to the prepared pan and lightly press until even. Allow them to set for about 1 hour before cutting into your desired shapes to serve. Enjoy!

- Store any leftovers uneaten rice krispie treats in an airtight container at room temperature for up to 4 days. These treats do not have to be kept in the refrigerator.

Notes
- Use parchment paper to line the baking dish/sheet to prevent sticking and allow for easier cleanup.
- Use pure vanilla extract and not imitation. It really makes a difference. If you do not have pure vanilla extract, then you may omit it completely.
- When pressing them into the pan, to prevent sticking, dampen your hands a bit with water.
- Don't be afraid to add more marshmallows, it will make them even more gooey!
- Spread the rice krispie treat mixture evenly into the pan with damp hands, but do not press with a lot of pressure. You wand to gently pat them down and then stop. This will keep the treats soft and chewy instead of hard and crispy.
