The first time I made this Sloppy Joe Cornbread Casserole, it was one of those Tuesday nights where I'd been going since six in the morning and the only things in my kitchen were a pound of ground beef, a box of Jiffy mix, and a can of sloppy joe sauce. What came out of the oven that night was Sweet cornbread on the bottom, saucy beef and melted cheddar on top, and it has been in my regular rotation ever since. My family asks for it by name now, and it's the recipe friends text me about when they need something fast.

I've been making some version of this casserole for more than a decade, and it's grown into one of the most-loved recipes on Simply LaKita. Over the years I've tested it with different cornbread mixes, different pan sizes, and both canned and homemade sauce, and the method below is the one that solves the problem everybody runs into with this dish: a soggy bottom. Ingredients You'll Need

Here's everything you'll need to make this recipe.

  • Cornbread mix. An 8.5-ounce box of Jiffy corn muffin mix is the shortcut that makes this a weeknight recipe. Jiffy is on the sweeter side, which is exactly what you want against the tangy sloppy joe sauce. Any comparable brand works, Krusteaz behaves nearly identically. If you'd rather make your base from scratch, my Southern Cornbread recipe will point you in the right direction, though you'll be adding time to the process.
  • Cream-style sweet corn. This is doing more work than people expect. It adds moisture and sweetness to the base and gives the cornbread a softer, more custardy texture that holds up under sauce. Regular canned corn, drained, will work but the base comes out drier and less sweet.
  • Shredded cheddar cheese. Cheddar goes in twice, a little stirred into the cornbread batter and more sprinkled over the top at the end. The cheese in the batter is not a garnish, it adds fat and structure to the base. Shred your own from a block if you can. Pre-shredded is coated in anti-caking starch that keeps it from melting as smoothly.
  • Sloppy joe sauce. Manwich is the most common canned sloppy joe sauce and it's what most readers reach for, but any brand you like works. You'll need a full 24 ounces because the sauce gets divided in half, and that division is the whole trick to this recipe.
  • Lean ground beef. Lean matters here. Fatty beef renders grease that pools on top of the cornbread and makes the base heavy and slick. Drain thoroughly no matter what you use.
  • Whole milk, one egg, and butter. The milk and egg bind the cornbread batter; the butter starts the onion and pepper.
  • Yellow onion and green bell pepper. These get softened before the beef goes in, which builds a savory base underneath all that sweetness. Don't skip them, without them the filling tastes flat and one-note.

How to Make Sloppy Joe Cornbread Casserole

Here's a quick overview of the process. Full step-by-step instructions are in the recipe card below.

Step 1: Mix and Par-Bake the Cornbread Base

Stir the cornbread mix, cheese, milk, egg, and the whole can of cream-style corn together, then spread it into a greased 9x13 dish and bake until it's just softly set, not fully done. You're looking for a surface that's lost its wet sheen and springs back a little when you touch it, with the center still slightly underbaked. It'll finish cooking under the topping later, and pulling it early is what keeps the final texture tender rather than dry.

Step 2: Build the Sloppy Joe Filling

While the base bakes, melt butter in a large skillet and soften the onion and bell pepper for two to three minutes before the beef goes in. Cook the beef until no pink remains, then drain the fat off properly, not just tilting the pan. Stir in only half the sloppy joe sauce and let it heat through.

Step 3: Prick the Base and Add the First Layer of Sauce

This is the step that makes this recipe different from every other version out there, so don't skip it. Pull the par-baked cornbread out and prick holes all over the top with a fork. Then pour the remaining half of the sloppy joe sauce directly over the cornbread and let it settle into those holes.

Most recipes dump all the sauce into the meat and lay it on top, which leaves the sauce sitting on the surface and eventually weeping down into a soggy layer. Splitting it means the base absorbs sauce on purpose, from the inside, while it's still warm and porous. That's why the center bites of this casserole taste seasoned all the way through instead of like plain cornbread with something on top.

Step 4: Layer the Beef and Cheese

Spread the beef mixture evenly over the sauced cornbread, then scatter the remaining cheddar across the top. Take a second to push the beef out to the corners. An uneven layer means some servings get all topping and others get all base.

Step 5: Bake and Rest

Back into the oven for 10 to 15 minutes, until the cheese is fully melted and the edges are bubbling. Then let it sit. Resting is not optional on this one. Cut into it straight out of the oven and the layers slide apart on the spatula.

Here are my best tips for making this recipe turn out perfectly every time.

  • Rest it 5 to 10 minutes before cutting. The layers need that time to set. This is the single most common reason a slice falls apart on the way to the plate.
  • If the top browns before the cheese melts, tent the dish loosely with foil for the remaining bake time.
  • Warm the sauce slightly before pouring it on the cornbread. Cold sauce straight from the can sits on the surface instead of soaking in through the fork holes.
  • Push the batter into the corners of the pan. Cornbread batter with cream-style corn in it is thick and doesn't self-level the way thinner batters do.
  • Watch the first bake, not the clock. Ovens vary, and an underbaked base is the one mistake that can't be fixed later. Softly set and matte on top is your cue.
  • If your sauce is very thick, loosen it with a tablespoon or two of water before it goes over the cornbread so it can actually travel into the holes.
  • The best bites come from the center, where the cornbread has soaked up the most sauce but the edges still have a little crust. Serve from the middle out if you're feeding people you like.

Variations & Substitutions

This recipe is flexible, here are some easy ways to make it your own.

  • Make it less sweet by using a savory cornbread mix or swapping the cream-style corn for regular canned corn, drained.
  • Add heat with a pinch of cayenne, red pepper flakes, or diced jalapeños stirred into the beef, or swap the cheddar for pepper jack.
  • Swap the protein. Ground turkey or ground chicken work in the same amount. Season a little more aggressively, since they bring less fat and flavor than beef.
  • Stretch it with vegetables by adding finely chopped carrots, celery, or mushrooms alongside the onion and pepper.
  • Use a thicker base with a 15-ounce box of cornbread mix instead of the 8.5-ounce. Add a couple of minutes to the first bake.
  • Go homemade on the sauce and use about 24 ounces of your own sloppy joe mixture in place of the can.

Make-Ahead & Storage

Make-Ahead

You can bake the cornbread base up to 24 hours ahead. Cool it completely, then cover the dish tightly and refrigerate. Make the sloppy joe filling separately and store it in its own container. When you're ready to eat, prick the base, pour on the reserved sauce, add the beef and cheese, and bake until hot and bubbling. Add about five minutes to the final bake since you're starting from cold.

Storage & Reheating

Storage: Cover the baking dish tightly with foil or move leftovers to an airtight container. It keeps in the refrigerator for up to 3 days.

Reheating: Warm individual portions in the microwave, or reheat the whole casserole covered at 350°F until heated through. If the cornbread seems dry, spoon a little extra sloppy joe sauce over the top before reheating.

Freezing: This casserole freezes for up to 3 months. Thaw overnight in the refrigerator, then reheat covered in the oven. Keep a little extra sauce on hand to add moisture back if it needs it.

What to Serve with Sloppy Joe Cornbread Casserole

Here are some of my favorite ways to serve this dish.

  • Something cool and crisp to cut the richness. Try it with Southern Coleslaw.
  • A simple green vegetable like Garlic Green Beans, which keeps the plate from feeling heavy.
  • More corn, unapologetically Southern Fried Corn leans into the sweetness and makes it feel like a proper Sunday plate.
  • A plain green salad with a sharp vinaigrette, if you want the fastest possible side.
  • Something light for dessert. Fresh fruit or a simple cookie, since the main dish is doing plenty of work already.

Frequently Asked Questions

Why does the cornbread go on the bottom instead of on top?

Putting it on the bottom lets the base absorb the sauce rather than sit under a wet layer. When cornbread goes on top, the batter bakes over a pool of hot liquid, and the underside often stays gummy no matter how long you bake it. Par-baking the base first and forking it gives you a cornbread layer that's flavored through but still holds its shape when you cut it.

How do I keep the cornbread from getting soggy?

Three things, all of which are built into this recipe. Par-bake the base until it's softly set before anything goes on it. Drain the ground beef thoroughly so grease doesn't pool. And split the sauce. Half in the meat, half poured over the forked cornbread, so the base absorbs a controlled amount instead of being flooded from above.

Can I use Jiffy corn muffin mix?

Yes, and it's what I use. An 8.5-ounce box of Jiffy is the standard for this recipe. Jiffy runs sweet, which balances the tangy sloppy joe sauce nicely. Krusteaz and most store-brand mixes work the same way.

Can I use Manwich?

Absolutely. Manwich is the most widely available canned sloppy joe sauce and it works perfectly here. You'll need a full 24 ounces since the sauce gets divided in half. Any brand you already like will do the same job.

Can I use homemade sloppy joe sauce instead of canned?

Yes. Use about 24 ounces, roughly 3 cups, of your favorite homemade sloppy joe mixture in place of the canned sauce. Divide it in half the same way.

Can I make this casserole ahead of time?

Yes. Bake the cornbread base up to 24 hours in advance, cool it completely, and cover it tightly. Store the sloppy joe filling separately in the refrigerator. When you're ready, layer the reserved sauce, beef, and cheese over the base and bake until hot and bubbly, adding about five minutes since everything is starting cold.

Can I use a bigger box of cornbread mix?

You can. A 15-ounce box gives you a thicker, more substantial base. Give it an extra couple of minutes during the first bake so it reaches that softly-set stage before you add the topping.

Can I halve the recipe?

Yes. Halve everything and bake it in an 8x8 or 9x9 dish. The bake time runs a little shorter, so start checking early. Note that a smaller, deeper pan changes how the base sets, so watch that first bake closely.

Can I freeze sloppy joe cornbread casserole?

Yes, for up to 1 month. Cool it completely, wrap it tightly, and freeze. Thaw overnight in the refrigerator and reheat covered in a 350°F oven until heated through. Have a little extra sloppy joe sauce ready in case it needs moisture coming out.

Can I use leftover cornbread instead of a mix?

This recipe is built around a batter that bakes into a single set layer, so leftover cornbread behaves differently. Crumbled or cubed cornbread won't knit together into a base and tends to break apart when you serve it. If you've got cornbread to use up, you're better off with a dish designed for it rather than adapting this one.

  • 1 8.5 ounces cornbread mix
  • ½ cup shredded cheddar cheese
  • ⅓ cup whole milk

  • 1 24 ounces sloppy joe sauce, divided in half
  • 1 tablespoon butter
  • ½ cup yellow or white onion, diced
  • 1 large green bell pepper, chopped into smaller pieces
  • 1 pound lean ground beef
  • 1 ½ cups shredded cheddar cheese

Instructions
 

  • Begin the casserole recipe by preheating the oven to 400 degrees F. and lightly spraying a 9x13-inch casserole dish with cooking spray.
  • In a medium-sized bowl, add the 8.5 ounce box of Jiffy mix, ½ cup shredded cheddar cheese, ⅓ cup whole milk, 1 large egg, and a (14.75 ounces) whole can of cream-style corn. Stir well until combined.

  • Pour into the prepared baking dish. Place it into the preheated oven to bake for about 15 minutes, until it begins to softly set.

  • While the cornbread base is baking, heat a large skillet over medium-high heat and add the 1 tablespoon butter. Once the butter has melted, add the ½ cup diced onion and 1 large bell pepper.

  • Cook until it begins to soften, about 2 to 3 minutes. Add the pound of ground beef to the skillet and cook until the beef is no longer pink. Drain off any excess fat/oil if necessary.

  • Add half of the 24 ounce can of sloppy joe sauce to the pan, about 12 ounces along with the 1 pound beef and cook until it is heated thoroughly. Carefully remove the golden brown cornbread from the oven and use a fork to prick holes all over the top of the cornbread.

  • Pour the remaining half (12 ounces) of the sloppy joe sauce evenly over the top of the cornbread. Evenly add the ground beef mixture over the baked cornbread and top with 1 ½ cups shredded cheddar cheese.

    Brought it to a pig roast as a side dish...poof gone! Should have made two lol. Will try for a quick dinner some night! Lightly caramelized the onion and bell pepper, used a bit more than the recipe called for with some "jarlic"...removed it, browned the beef(85/15) a bit and returned it with sloppy joe sauce to finish. Used a 15 oz Krusteaz mix, perfect amount. Thinking banana pepper in the sloppy joe mix at the end. Definitely finished with green onion and need to make two 13x9 next time. Good recipe find!

    It's just my son and I he's a truck driver and I stay home and do nothing but look for great recipes.     This looks yummy!!! I'm a big fan of cornbread and miss it a lot since I've been trying to eliminate corn from my diet. However, this would be a must make if I was eating corn. I recently found that cream of buckwheat is a good subsitute for grits. So I've been happily eating my faux grits the past couple of days.

      Thank you so much! I love cornbread as well and unfortunately there really is no substitute is there...sorry...I have cut things out of my diet as well so I completely understand...but faux grits now that sounds very interesting.
