Candy Corn Rice Krispie Treats

Candy Corn Rice Krispie Treats combine gooey melted marshmallows, rice cereal, and chewy candy corn into a delicious treat. It's perfect to make and share for Halloween.

These tasty treats are inspired by my recipe for Halloween Pumpkin Rice Krispie Treats and if you cannot get enough cereal treats, then try making a simple batch of Gooey Rice Crispy Treats.

I absolutely love Rice Krispie Treats! The combination of gooey marshmallows, melted butter, and krispie rice cereal creates the best treat ever. I have made and shared them several times on the blog.

Along the way, I learned that adding in a bit of vanilla extract and extra marshmallows, not only adds in another depth of flavor, but also makes them super gooey and soft.

Something else that I learned during the process of making batches is that adding in another ingredient such as sprinkles, crushed cookies, or candy takes this treat to another level. So anytime that I can add an additional ingredient to make then extra special, I go for it.

This brings us to Halloween and one of the most controversial candies out there, candy corn. Some people love it while others completely hate it and cannot understand why it exists. I will admit that it is not my favorite candy, but I do get a bit of nostalgia when I see its arrival in stores during this time of year.

Why Candy Corn?

  • It is classic
  • Sweet
  • Chewy

It is cheap and the perfect no-frills candy. So what is something that we can do with this candy to upgrade it you may ask? Put it in a batch of Halloween inspired Rice Krispie Treats.

Now trust me, even if you're not a fan of candy corn, you may enjoy this recipe. In one square, you get gooey marshmallow, crispy rice cereal, with the occasional soft chewy bite every now and then of the candy corn all in one. It is so much going on with this treat, but it is so worth it. Try it!

Ingredient Notes

  1. Crispy rice cereal - Use any brand of crispy rice cereal that you prefer.
  2. Marshmallows - A 15 ounce bag of mini marshmallows is needed to make this recipe. Be sure that you use fresh soft marshmallows as they work the best and help make the treats ultra gooey.
  3. Butter - You will needed salted butter, but if you only have unsalted butter, then you can use that instead. Just add a pinch of salt in with the butter to melt.
  4. Vanilla extract - Make sure it is pure vanilla extract and not imitation vanilla extract, it does make a difference.
  5. Candy corn - Grab this at the store for the best price when it is in season in the seasonal products aisle.

Instructions

Begin the recipe by preparing a 9x13-inch baking dish or sheet pan with cooking spray or line with parchment paper for easier cleanup. Set aside. In a large pot, over medium-low heat, add the butter and stir around until melted. Add the marshmallows and stir continuously until melted.

Stir in the vanilla extract and remove the pot from the heat. Immediately stir in the crispy rice cereal until combined. During the last few seconds, stir in the candy corn until distributed.

Add the mixture into the prepared pan and lightly press until even. Allow them to set for about 1 hour before cutting into your desired shapes to serve. Enjoy!

Tips and Tricks

  • Use parchment paper to line the baking dish/sheet to prevent sticking and allow for easier cleanup.
  • Use pure vanilla extract and not imitation. It really makes a difference. If you do not have pure vanilla extract, then you may omit completely.
  • When pressing them into the pan, to prevent sticking, dampen your hands a bit with water.
  • Don't be afraid to add more marshmallows, it will make them even more gooey!
  • Spread the rice krispie treat mixture evenly into the pan with damp hands, but do not press with a lot of pressure. You wand to gently pat them down and then stop. This will keep the treats soft and chewy instead of hard and crispy.

Equipment

This recipe is so simple that only a few items are needed to make it. You will need a large pot to combine all of the ingredients together. You will also need a rectangle baking dish or a medium-size sheet pan to spread the treats and allow them to set before serving.

Storage

Store any leftovers uneaten rice krispie treats in an airtight container at room temperature for up to 3 days if they can last in your home that long. These treats do not have to be kept in the refrigerator.

  • 4 ½ tablespoons salted butter
  • 16 ounces mini marshmallows (a 16 ounce bag)
  • 1 teaspoon vanilla extract
  • 6 cups crispy rice cereal
  • 1 cup candy corn candy

Instructions

  • Stir in the 1 teaspoon vanilla extract and remove the pot from the heat. Immediately stir in the 6 cups crispy rice cereal until combined. During the last few seconds, stir in the 1 cup candy corn candy until distributed
  • Add the mixture to the prepared pan and lightly press until even. Allow them to set for about 1 hour before cutting into your desired shapes to serve. Enjoy!
