Ranch BLT Pasta Salad Recipe

Ingredients

rotini pasta

cup
ranch dressing, divided

diced tomatoes (cherry or grape tomatoes, halved)
¾

Swiss cheese, finely grated
½

red onion, thinly sliced

bacon, cooked crispy and chopped
1
cup
Romaine lettuce, roughly chopped
Salt and ground black pepper, to taste
Instructions
Cook the 8 ounces rotini pasta according to package instructions until al dente in plenty of salted water. Drain well.
Gently toss the warm pasta with ½ cup ranch dressing to lightly coat and prevent sticking. Refrigerate until completely cold, at least 30 minutes.
In a large bowl, combine the cold pasta with 1 cup tomatoes, ¾ cup Swiss cheese, ½ cup red onion, 1 cup bacon, and 1 cup lettuce.
Add the remaining ½ cup ranch dressing and gently toss to coat everything. Season to taste with salt and ground black pepper.
Serve immediately and enjoy!
Notes
If your dressing is too thick, add 1-2 tablespoons of milk to thin it out.
Keep lettuce separate until serving to prevent wilting.
Any small to medium pasta works. Try gluten-free, chickpea, or protein pasta.
Substitute Swiss cheese with cheddar, mozzarella, or pepper jack if preferred.
Turkey bacon works great as a lighter alternative.
