Baked Cod in Parchment
Chili Lime Seasoning
Cut parchment paper into four large rectangles. Generously season both sides of each piece of fish with the 1 tablespoon chili lime seasoning blend. Set aside.
Place a layer of ¼ cup corn at the bottom of the middle of the parchment paper. Top with seasoned fish followed by red onion, ½ tablespoon butter, and a squeeze of lime for the juice.
Fold the parchment paper over to cover the fish and roll tightly to completely cover. Bake for 12 to 15 minutes 375 degrees F depending on the size of your fish.
Remove the packet from the oven and allow them to sit and steam for an additional 2 to 3 minutes before serving. Top with cilantro, tomatoes, avocado or salsa.
