Ingredients

red onion, thinly sliced

cup
white wine vinegar

tablespoon
granulated sugar

teaspoon
coarse salt
Instructions
Using a sharp knife, remove the top and bottom, peel, and thinly slice the 1 medium red onion into rounds.
Place sliced onions into a clean, wide-mouth jar.
In a small bowl or glass pitcher, stir together the ½ cup white wine vinegar, 1 tablespoon granulated sugar, and 1 teaspoon salt until dissolved.
Pour the vinegar mixture over the onions, pressing down gently to submerge.
Leave at room temperature for 30 minutes, stirring once halfway through.
Cover and store in the refrigerator for up to 2 weeks. They’ll continue to develop flavor over time!
Notes
Slice onions thinly for best texture.
Stir the onions halfway through the resting time for even pickling.
Use a clean jar to extend shelf life.
