Shred the 1 ½ cups cheddar and ½ cup gouda using a box grater (avoid pre-shredded).
In a large mixing bowl, combine cheeses, ½ cup chopped pimentos, ¼ cup sour cream, ¼ cup mayo, ½ teaspoon Old Bay, ¼ teaspoon smoked paprika, ⅛ teaspoon salt, and ⅛ teaspoon pepper.
Stir with a wooden spoon until creamy and fully combined.
