Preheat the oven to 350°F. Line two baking sheets with parchment paper.
In a large bowl, cream together 1 cup butter, ½ cup granulated sugar, and ½ cup brown sugar until smooth. Mix in the 1 egg and 1 tablespoon vanilla.
In a separate bowl, whisk together the 1 cup flour, 1 teaspoon salt, ½ teaspoon baking soda, ⅛ teaspoon cloves, ¼ teaspoon allspice, ½ teaspoon ginger, 3 teaspoons cinnamon, and 2 cups oats.
Slowly add the dry ingredients to the wet mixture and mix until combined.
Fold in both types of 1 ½ cups raisins by hand.
Use a cookie scoop to drop dough onto the baking sheets, spacing them at least 1 inch apart.
Bake for 15–20 minutes or until lightly golden around the edges.
Let cookies cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
For crispier edges, bake a little longer.
Swap raisins with dried cranberries or chopped dates if preferred.
