Icebox Cookies are the best way to bake cookies! Mix some simple ingredients, add your favorite additions, and place them in the freezer until you're ready to bake.
In a medium bowl, whisk together the 2 ½ cups all-purpose flour, 1 teaspoon baking soda, and 2 teaspoons salt. Set aside.
Use a large bowl with an electric mixer or stand mixer with a paddle attachment on medium-high speed. Add the 1 cup butter, 1 cup brown sugar, ½ cup granulated sugar, and 1 teaspoon vanilla extract. Mix until well combined and light yellow in color, about 2 minutes. Add in the 2 large eggs.
Slowly add the flour mixture/dry ingredients to the wet mixture. Continue mixing on low speed until combined. Turn off the mixer and add in the 1 ½ cups additions. Use a rubber spatula or wooden spoon to evenly distribute the additions throughout the icebox cookie dough.
Scoop the dough onto a large parchment-lined baking sheet using a large cookie scoop or ice cream scoop. Gently press the dough balls to flatten them a bit. Try to space the cookie dough about 1 inch apart. Place the dough into the freezer for about 20 minutes before baking.
Preheat the oven to 325 degrees F. Remove the chilled dough from the freezer and place into the oven to bake for about 12 to 14 minutes, until golden brown. If you prefer not to bake all of the cookies, place the dough balls into a freezer bag and allow them to remain in the freezer until you're ready to bake.
Carefully remove the baked cookies from the oven and place the baking sheet on a wire rack. Allow it to cool for about 5 to 10 minutes before removing the cookies completely from the baking sheet. Serve with a big glass of milk or tea and enjoy!
