Make this simple and delicious Honey Mustard Chicken Marinade for sweet, tangy, and juicy chicken that's perfect to pair with baked or grilled chicken thighs.
To a large mixing bowl, baking dish, or plastic storage bag, add the ¼ cup honey, ¼ cup dijon mustard, 2 tablespoons grainy mustard, 2 tablespoons olive oil, 2 cloves fresh minced garlic, 1 tablespoon lemon juice, 1 teaspoon freshly chopped thyme, ½ teaspoon salt, and ½ teaspoon ground black pepper.
Whisk to combine all of the ingredients together.
Add the 2 pounds chicken thighs and stir to fully combine and coat all of the chicken in the marinade.
Cover the bowl with plastic wrap or seal the bag and place it into the refrigerator for 30 minutes up to 4 hours. This allows the flavors time to come together and marinate the chicken thighs.
Baking. Preheat the oven to 375 degrees F. Lightly spray an 8x8-inch baking dish with cooking spray or line it with parchment paper. Transfer the marinated chicken to the baking dish. If you want to drizzle the marinade over the chicken you can, this is completely optional.
Place the chicken into the oven to bake for about 25-30 minutes, or until the internal temperature reaches 165 degrees F.
Grilling. Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, shaking off any excess, and discard the remaining marinade.
Place the chicken on the hot grill and grill for about 6-8 minutes per side, or until it's cooked and reaches the internal temperature of 165 degrees F.
Keep in mind cooking times may vary depending on the thickness of the chicken thighs.
Carefully remove the cooked chicken from the oven or grill. Allow it time to rest from about 5 to 10 minutes before serving. Pair it with cooked rice, mashed potatoes, or roasted broccoli. Enjoy!
