Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup plus 2 Tablespoons granulated sugar
  • 3 large eggs
  • 1/4 cup molasses
  • 1/2 teaspoon vanilla extract
  • 1 cup shredded carrots
  • 1 cup raisins
  • 3/4 cup chopped walnuts

Instructions

  • Preheat oven to 350 degrees F.
  • Combine flour, cinnamon, baking powder, baking soda, and salt in a medium mixing bowl and whisk to combine.
  • In a separate large bowl, combine vegetable oil, sugar, eggs, molasses, and vanilla with an electric mixer.
  • Add shredded carrots and mix. Add raisins and walnuts and mix well by hand.
  • Stir the flour mixture into the other ingredients until combined.
  • Pour batter into two 8-inch loaf pans and bake for 50 to 60 minutes, or until done.
  • Store in an airtight container or plastic bag up to 1 week.
