- 1 ½ cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup vegetable oil
- 1 cup plus 2 Tablespoons granulated sugar
- 3 large eggs
- ¼ cup molasses
- ½ teaspoon vanilla extract
- 1 cup shredded carrots
- 1 cup raisins
- ¾ cup chopped walnuts
Preheat oven to 350 degrees F.
Combine flour, cinnamon, baking powder, baking soda, and salt in a medium mixing bowl and whisk to combine.
In a separate large bowl, combine vegetable oil, sugar, eggs, molasses, and vanilla with an electric mixer.
Add shredded carrots and mix. Add raisins and walnuts and mix well by hand.
Stir the flour mixture into the other ingredients until combined.
Pour batter into two 8-inch loaf pans and bake for 50 to 60 minutes, or until done.
Store in an airtight container or plastic bag up to 1 week.
