Baked Zucchini Fries
Baked Zucchini Fries are a crispy, tender, and healthy alternative to fried potato fries. This recipe is so easy to make and perfect to pair with any meal. Try making a batch today.
- 2 large fresh zucchini squash
- 1 large egg
- 1 tablespoon water
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan
- ¼ teaspoon garlic powder
- ¼ teaspoon dried basil
- ¼ teaspoon dried thyme
- salt and ground black pepper to preference
Begin the recipe by cleaning the zucchini and cutting it into the shape of fries or wedges. Preheat the oven to 400 degrees F. and line a baking sheet with parchment paper and set aside.
In a small bowl, whisk together the 1 large egg and 1 tablespoon water.
In a separate small bowl, combine 1 cup panko breadcrumbs, ½ cup grated Parmesan cheese, ¼ teaspoon garlic powder, ¼ teaspoon dried basil, ¼ teaspoon dried thyme, salt, and ground black pepper (to preference).
Dip the zucchini fries in the egg mixture until evenly coated, then toss the zucchini fries in the panko and Parmesan mixture until evenly coated.
Place on the prepared baking sheet. Continue this process until all of the zucchini fries are finished.
Place into the oven and bake for 18 to 20 minutes, turning the zucchini halfway through the baking process.
Continue baking until the crust looks crispy and golden brown. Serve immediately.
