Line an 8x8-inch baking pan with parchment paper and set aside.
Using a food processor, add in the cashews and almonds and process until the nuts are chopped into smaller pieces.
Add in the dates, lemon juice, and salt. Continue processing until it forms a mixture that sticks together.
Pour the mixture into the prepared pan and use a spatula to press down into an even layer. Place in the refrigerator and allow the bars to set, 1 to 2 hours.
Remove from the refrigerator and cut into the desired size. Store in an airtight container in the refrigerator for up to 5 days.
Notes
*Cut the dates in half before adding to the food processor for easier processing.
