Ingredients

  • ¾ cup unsalted cashews
  • ½ cup unsalted almonds
  • 1 ½ cups Medjool dates, pitted
  • 3 tablespoons lemon juice
  • ¼ teaspoon salt

Instructions

  • Line an 8x8-inch baking pan with parchment paper and set aside.
  • Using a food processor, add in the cashews and almonds and process until the nuts are chopped into smaller pieces.
  • Add in the dates, lemon juice, and salt. Continue processing until it forms a mixture that sticks together.
  • Pour the mixture into the prepared pan and use a spatula to press down into an even layer. Place in the refrigerator and allow the bars to set, 1 to 2 hours.
  • Remove from the refrigerator and cut into the desired size. Store in an airtight container in the refrigerator for up to 5 days.

Notes

*Cut the dates in half before adding to the food processor for easier processing.
