Ingredients

  • 2 ½ cups old-fashioned oats
  • 2 ½ cups brown rice cereal
  • ½ cup brown sugar, packed
  • ½ cup coconut oil, melted
  • ½ cup agave nectar
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla extract
  • 1 cup chocolate chips
  • ½ cup pecans, chopped (optional)

Instructions

  • Preheat the oven to 350 degrees F. and line a 13 x 9-inch rectangle-baking dish with parchment paper.
  • In a large mixing bowl, add the oats, rice cereal, sugar, oil, agave, salt, vanilla, and give the mixture a stir to combine the ingredients.
  • Next, fold in the chocolate chips and pecans until they are evenly distributed throughout the mixture.
  • Pour into the prepared pan and spread evenly. Place into the oven and bake for 10 minutes until the oats have become golden. Remove the baking dish from the oven and allow the granola bars to cool completely in the pan prior to cutting. Cut the granola in the shape of bars and store the chewy chocolate chip granola bars in an airtight container.
