Pumpkin Spice Granola
Pumpkin Spice Granola – Sweet granola infused with the flavors of Fall with the addition of pumpkin puree, maple syrup, and pumpkin pie spice. Simple, fast, and delicious!
- 3 cups rolled oats
- 1 cup walnuts, chopped
- ½ cup almonds, chopped
- ½ cup pecans, chopped
- 1 tablespoon flax seed
- ¼ teaspoon salt (if using salted nuts omit)
- 1 cup brown sugar, packed
- ½ teaspoon ground cinnamon
- 1 ½ teaspoons pumpkin pie spice
- 1 cup pumpkin puree
- ¼ cup coconut oil (or any neutral oil)
- ½ cup maple syrup
Preheat the oven to 250 degrees F. and line a large baking sheet with parchment paper.
In a large bowl, combine the oats, walnuts, almonds, pecans, flax seed, salt, brown sugar, ground cinnamon, and pumpkin pie spice.
In a small separate bowl, stir together the pumpkin puree, coconut oil, and maple syrup.
Stir the pumpkin puree mixture into the oat mixture and stir until combined. Spread the granola onto the prepared baking sheet and place into the oven to bake.
Cook for 1 hour and 15 minutes, making sure to stir every 15 minutes to achieve even color.
Remove from the oven and allow the granola to cool completely before storing in an airtight container.
