Equipment

  • square baking dish

Ingredients

  • 3 cups bread, cut into 1-inch pieces
  • ½ pound ground sausage
  • ½ tablespoon olive oil
  • 1 small onion, diced
  • ¾ cup diced California Cling Peaches, drained
  • 1 cup cheese shredded
  • 2 large eggs
  • 1 large egg yolk
  • ½ cup milk
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Begin the recipe by preheating the oven to 350 degrees F. and grab a square 8 x 8-inch baking dish. Lightly spray with cooking spray and add the 3 cups bread cubes in an even layer on the bottom. Set aside.
  • In a medium skillet over medium-high heat, add the ½ pound ground sausage. Use a wooden spoon to break up the sausage as it cooks. Cook for 5 to 10 minutes until it has completely browned. Remove the skillet from the heat and drain off the fat and remove the sausage and place in the baking dish evenly on top of the bread.
  • Using the same skillet add the olive oil and heat thoroughly before adding the small diced onion. Cook, stirring frequently until the onion has softened and is translucent for about 2 to 3 minutes. Add the ¾ cup diced cling peaches and stir until warm. Remove from the heat and add to the baking dish over the sausage in an even layer.
  • Top evenly with the 1 cup shredded cheese. In a large bowl, whisk together the 2 large eggs, 1 large egg yolk, ½ cup milk, ½ teaspoon salt and ¼ teaspoon ground black pepper until smooth. Slowly pour over the bread mixture and press down to make sure the bread is well coated.
  • Cover the baking dish with aluminum foil and place it into the oven to bake for 15 minutes. Remove the aluminum foil and bake for an additional 10 minutes. Carefully remove from the oven and allow it to cool for about 5 minutes before serving. Enjoy!
