- 15 ounces (3 cans) black-eyed-peas, un-drained
- 1.5 pounds boneless pork chops
- 1 large onion, chopped
- salt and pepper to taste
- garlic powder to taste
Open and pour the three cans of black eyed peas into the slow cooker and season with salt and pepper to your taste.
Season both sides of the pork chops with salt, pepper, and garlic powder. Place in an even layer on top of the black eyed peas in the slow cooker.
Top the seasoned pork chops with the chopped onion in an even layer. Season with more salt and pepper to taste if you prefer.
Place the lid on the slow cooker and cook on low for 6 to 8 hours or on high for 2 to 4 hours depending on your slow cooker. Remove the lid occasionally to stir.
Once the time is up, check the pork chops for the desired doneness. Serve over rice with a side of southern cornbread.
