  • 15 ounces (3 cans) black-eyed-peas, un-drained
  • 1.5 pounds boneless pork chops
  • 1 large onion, chopped
  • salt and pepper to taste
  • garlic powder to taste

  • Open and pour the three cans of black eyed peas into the slow cooker and season with salt and pepper to your taste.
  • Season both sides of the pork chops with salt, pepper, and garlic powder. Place in an even layer on top of the black eyed peas in the slow cooker.
  • Top the seasoned pork chops with the chopped onion in an even layer. Season with more salt and pepper to taste if you prefer.
  • Place the lid on the slow cooker and cook on low for 6 to 8 hours or on high for 2 to 4 hours depending on your slow cooker. Remove the lid occasionally to stir.
  • Once the time is up, check the pork chops for the desired doneness. Serve over rice with a side of southern cornbread.
