Ingredients

  • 1 8.5 ounce box corn muffin mix (Jiffy works great)
  • 1 cup shredded cheddar cheese, divided
  • cup milk
  • 1 large egg
  • 1 14.75 ounce can cream-style sweet corn
  • 1 24 ounce can sloppy joe sauce (or homemade), divided
  • 1 pound ground beef
  • 1 tablespoon butter
  • ½ large sweet yellow onion, chopped
  • 1 large bell pepper, (any color) chopped

Instructions

  • Preheat the oven to 400 degrees F. and lightly spray a 9×13-inch baking dish with cooking spray.
  • In a medium-sized bowl, add the cornbread mix, ½ cup of cheddar cheese, milk, egg, and canned corn. Stir until well combined. Pour into the prepared baking dish. Bake for 15 minutes or just until set.
  • While the cornbread is baking, heat a large skillet over medium heat and add the butter.
  • While the butter is melting, chop the onion and bell pepper into small pieces. Add to the pan and cook until just beginning to soften.
  • Add the ground beef to the skillet and cook until no longer pink. Drain the fat.
  • Add all but ½ of the sloppy joe sauce to the pan with the meat to warm.
  • Remove the cornbread from the oven and use a fork to prick holes over the cornbread. Pour the remaining ½ of the sloppy joe sauce over the cornbread. Spoon the meat and sauce over the baked cornbread and top with the remaining ½ cup cheese. Return to the oven for 15 minutes.
