  • 1 tablespoon ground flax + 2.5 Tablespoons water (flax egg) *May use 1 large egg instead
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup Earth Balance butter
  • ½ cup packed dark brown sugar
  • cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¾ cup non-dairy chocolate chips (such as Enjoy Life)


  • Heat the oven to 350 degrees F. and place a piece of parchment paper over a baking sheet.
  • Combine the flaxseed and water in a small bowl. Set aside and allow time to thicken.
  • In a medium bowl, whisk the flour, baking soda, and salt in a bowl. Set aside.
  • Place the butter in another bowl and add in the sugars and whisk vigorously for about 2 minutes. The cookie dough should become light and fluffy.
  • Add the flax egg and vanilla extract to the butter mix, and whisk well until combined.
  • Add the flour mix to the butter mixture and stir together with a wooden spoon just until combined and be careful not to over mix. Gently fold in the chocolate chips.
  • Drop by the heaping tablespoon onto the baking sheet spaced about an inch apart and bake for 12-14 minutes, until they are light golden brown
  • Remove from the oven and let cool on the baking sheet for about 5 minutes. Transfer to a wire cooling rack and let cool completely.
