Equipment

  • sushi rolling mat (covered with plastic wrap)

Ingredients

  • Gardein Mini Crabless Cakes prepared and chopped
  • 1 cup prepared sushi rice
  • 1 cucumber, sliced thinly
  • 1 ripe avocado, sliced
  • toasted nori (seaweed wrap)
  • toasted sesame seeds
  • soy sauce
  • wasabi paste or powder
  • spicy mayo (1 Tablespoon vegan mayo plus 1 teaspoon sriracha)

Instructions

  • First, you will need to prepare the sushi rice, Gardein Mini Crabless Cakes, slice the veggies, and prepare the spicy mayo.
  • Next using your sushi rolling mat that has been covered in plastic wrap, place a sheet of nori smooth side down on the mat and spread a generous amount of sushi rice onto the nori sheet. Wet your fingertips and spread the rice evenly over the entire surface of the nori.
  • Flip the rice covered piece of nori over so the rice is facing down and place your fillings across the center of your nori lengthwise making sure not to overfill.
  • Start rolling your sushi using the matt to firmly keep the roll in place. Apply some pressure to make the roll tight and keep in mind that if the roll is not tight enough, it will be difficult to cut.
  • Once the vegan sushi is complete, sprinkle it with some sesame seeds, cut it evenly into 1-inch pieces, and enjoy with wasabi, soy sauce, and spicy vegan mayo.
