Easy Vegan Brownies

Ingredients

  • 2 tablespoons ground flax meal
  • 6 tablespoons water
  • 1 cup all-purpose flour
  • cup cocoa powder
  • ½ cup vegan butter
  • cup vegan chocolate chips, divided
  • ¾ cup organic cane sugar
  • 1 teaspoon vanilla extract
  • ½ cup walnuts, chopped (optional)

Instructions

  • Preheat oven 350 degrees and line an 8 by 8-inch square baking pan with parchment paper.
  • Mix the ground flaxseed and water together to make the flax ‘egg’ and place in the fridge for about 10 minutes or until the mixture has thickened to the consistency of a regular egg.
  • In a medium mixing bowl, whisk together the flour and cocoa powder and set aside.
  • In a small mixing bowl, place the butter in the microwave for a few seconds until melted and stir in ⅓ cup of the chocolate chips until melted and smooth. Stir in the flax egg, cane sugar, and vanilla extract until fully combined and then add to the flour mixture and stir until combined, careful not to over mix.
  • Fold in the rest of the chocolate chips and walnuts until distributed evenly, pour into the prepared pan, and bake for 20 to 25 minutes; or until the top has set.
