Burrito Bowl

Instead of heading to Chipotle, make this burrito bowl at home instead. Loaded with Cilantro Lime Rice, sauteed bell peppers, chopped tomatoes, and anything else you want.

Ingredients

  • 1 cup uncooked rice, white or brown
  • Juice of half a lime
  • 2 tablespoons fresh cilantro, chopped
  • 1 can whole kernel corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 2 bell peppers, thinly sliced
  • ½ red onion, thinly sliced
  • 2 tomatoes, diced
  • ¼ cup fresh cilantro, chopped

Instructions

  • In a large saucepan on medium heat, pour in the uncooked rice and 2 cups of water. Allow it to come to a boil. Turn down the heat to low, cover, and allow it to finish cooking. The water will be absorbed and the rice will be tender about 20 minutes. Fluff the cooked rice and stir in the lime juice and chopped fresh cilantro.
  • In a skillet on medium heat, heat the olive oil and add in the sliced bell peppers and onion. Cook until they have softened.
  • To assemble the burrito bowl, divide the rice mixture into serving bowls. Top with corn, black beans, peppers, onion, and tomatoes. If you prefer more cilantro, sour cream, shredded cheese, salsa, and guacamole would be great options as well.
