Easy Greek Yogurt Lemon Loaf

Ingredients

Lemon Loaf: – 1 ½ cups all-purpose flour – 2 teaspoons baking powder – ½ teaspoon salt – 3 large eggs – 1 cup (8 ounces) plain Greek yogurt – 1 cup granulated sugar – ½ cup vegetable oil – 2 tablespoons lemon zest – 1 teaspoon lemon extract

Ingredients

Glaze Topping: – 1 cup powdered sugar – 3 tablespoons lemon juice

Begin the loaf of bread by preheating the oven to 350°F (175°C). Grease and lightly flour a 9x5-inch loaf pan or line it with parchment paper. Set aside.

In a medium bowl, whisk together the 1 ½ cups all-purpose flour, 2 teaspoons baking powder, and ½ teaspoon salt. Set aside.

In a large mixing bowl, add the wet ingredients. Combine well.

Add the 2 tablespoons lemon zest, and 1 teaspoon lemon extract, and mix until combined. Add the flour mixture and stir until all of the ingredients come together, then stop.

Carefully pour the bread mixture into the prepared loaf pan. Use a rubber spatula or spoon to smooth out the top of the bread in an even layer.

Place into the oven to bake for about 45 to 50 minutes, until a toothpick inserted in the middle of the bread comes out with little to no crumbs.

Let cool before topping with the lemon icing glaze.
