Instant Espresso Powder
In a medium bowl, whisk together the flour, baking soda, salt, and set aside
In a small bowl, stir together the instant espresso powder & warm water until the espresso has dissolved.
Mix sugar, butter, egg, and vanilla extract in a stand mixer. Then add the coffee & flour mixtures & chocolate.
Spoon the dough onto a prepared baking sheet. 1 heaped tablespoon per cookie at least 1 inch apart.
Bake for 10-12 minutes then allow to cool for 5 minutes before serving!
