Today I decided to have a healthy lunch and since I still had some pineapple salsa left over from Friday’s recipe, I decided to make a vegetarian lettuce wrap.
- 3 Romaine Lettuce Leaves
- Half of an Avocado
- 5-6 Grape Tomatoes (cut tomatoes in half)
- Pineapple Salsa (here is the recipe)
I used the entire Romaine lettuce leaf to make the actual wrap itself and I filled it with avocado slices, grape tomato halves, and topped it with the yummy pineapple salsa.
It almost reminded me of a taco and it was very filling.
