    I had to pick up my son today from his father’s house where he spent the weekend and since there is a Wal-mart close by I decided to stop there to pick up a few things for the week. I am usually not a fan of Wal-mart for the big reason that their customer service is certainly lacking and I always feel as though I am ‘bothering’ the employees that work there because I want to check out with my purchases and make it in and out of the store as quickly as possible. What do you mean you have 20 people waiting to check out and only 2 cashiers open?? I don’t mind waiting in line for over 10 minutes with my items…said no one ever.

    Seriously this is not a post about the reasons why I do not like Wal-mart because it does have its advantages like I can buy my groceries, have the oil in my car changed, pick up the toilet paper, and television all in one-stop…Where else can you do all of that? After all, they don’t call it the Super Center for nothing!

    On this trip as I made it to the produce section of the store, there was a huge display in the middle of the floor, full of strawberries. And not just any strawberries by these big, red, sweet-smelling strawberries that I could not resist. It was as if they placed them there just to make sure you didn’t miss them while you were in the store. These strawberries were going home with as many people as possible today. See how tricky this store is…they knew what they were doing! So, of course, I fell for it. There was no way that I could not take at least one container of these strawberries home with me.

    Soda Cake with Whipped Strawberry Topping Ingredients: 

    • 1 box of yellow cake mix
    • 12 oz. diet soda of choice, light in color
    • fresh strawberries, chopped
    • cool whip

    Instructions: 

    Preheat over 350 degrees F. and spray a 9 x 13-inch baking pan with non-stick cooking spray or grease it with oil.

    In a medium bowl, pour in the entire box of yellow cake mix and for a well in the center and slowly pour in the diet soda. The mixture will become foamy and that is perfectly fine.

    Using a whisk, mix the cake batter until it is combined and there is no dry mix left. Be careful not to over mix, the batter will be lumpy.

    Spread the cake batter into the prepared pan and smooth with a spatula to make sure it is even. Place into the oven and bake for 20 minutes or until the cake tester comes out clean.

    Allow the cake to cool completely and top with cool whip and chopped strawberries.

      We aren’t buying strawberries right now because our garden is FULL of them. So we keep looking for new strawberry recipes every day. Looks like I’ll be making these!

      The employees at Wal-Mart are horrible most of the time. However, they do have just about everything you need. This recipe looks yummy. I’m a big fan of spring/summer because of all of the berries that are available. Right now we are enjoying eating lots of cherries at our house.

        Wal-mart certainly has everything you need in one place, but I just have low expectations for their customer service. Ahhh Cherries…Yes I love those as well!!
