    It is officially Spring and the weather is beginning to warm up with Summer looming in the air. For me, it's a time when I find myself on the go and being much more active. This certainly requires me to have easy portable options when it comes to food.

    I'm talking about foods that are simple to prepare with minimal ingredients, filling, and convenient enough to fit into my bag as I'm bolting out the door. One of my favorite go-to snack/lunch options is a peanut butter and jam/jelly sandwich. It's a classic sandwich that is comforting and delicious enough for the whole family to enjoy.

    Ingredient Notes

    1. California Cling Peaches - California Cling Peaches are harvested, packed and shipped at their peak ripeness for a one of a kind naturally sweet flavor. Consider keeping them stocked in your pantry because they have a long shelf life and are available at your local grocery store in cans, jars, and single-serve cups.
    2. Sugar - Use a small amount of granulated or cane sugar to sweeten the cling peach jam.
    3. Corn starch - Be sure to check the date to make sure that it has not expired. This will help to thicken the jam.
    4. Salt - Balances the flavor of the jam and prevents it from tasting flat. Only a pinch is needed. Use any salt that you prefer or have on hand.
    5. Peanut butter - Use any peanut butter or nut butter that you prefer.
    6. Bread - Try using sliced artisan bread to make this sandwich or your favorite will work as well.

    Instructions

    Begin the sandwich recipe by making the California Cling Peach Jam by adding some canned cling peaches, granulated sugar, corn starch, and salt into a medium saucepan over low heat. Use a potato masher to combine the ingredients and break the cling peaches into smaller pieces. The mixture will still be chunky. Cook for about 3 minutes, stirring often.

    Carefully remove the saucepan from the heat and allow it to cool completely before adding the jam into a jar with a lid or an airtight container with a lid.

    Next assemble the sandwich by grabbing two slices of artisan bread. Use a knife to evenly spread the cling peach jam on one side of a slice of bread and peanut butter on the other slice.

    Gently press together the side with the jam and the peanut butter. Make sure the top meets the bottom and slice in half if you prefer before serving. Enjoy!

    Storage

    Store any cling peach jam leftovers in an airtight container or jar with a lid in the refrigerator for up to 3 weeks.
