    Mini BBQ Beef Pies

    Mini BBQ Beef Pies are the perfect quick and easy dinner the whole family is sure to love. Savory ground beef, cheesy cheddar, and bbq sauce wrapped in pie crust. Tasty and delicious.

    Weeknights mean a quick meal for my crew with whatever is left over in my refrigerator because I usually do my grocery shopping for the week on the weekend, so towards the end of the week my kitchen begins to look a little bare.

    But, no worries it's a great time to get a little creative and make a meal with the ingredients that I do have left. In other words, put them all together to see what I can come up with. Kind of like my favorite Food Network television show Chopped, except you'll probably almost never find any durian or haggis in my kitchen.  

    Anyway, these BBQ Beef Pies are simple to make and require very few ingredients, which is the perfect way to satisfy a hungry family during the week.

    Ingredients You'll Need

    1. Ground Beef - The main star and protein of this recipe. Use any ground beef that you prefer, but I like to use lean ground beef. May also use ground chicken or ground turkey as well.
    2. BBQ Sauce - Use your favorite original brand of sauce, any will work for this recipe.
    3. Cheese - Select a cheddar cheese. You can buy the pre-shredded bag version or you can buy the bulk/block and shred it yourself using a box grater.
    4. Pie Crust - Make your own or keep it quick and easy by using refrigerated pie crust that can be located at any grocery store in the refrigerator sections.

    Step By Step Instructions

    Cook the ground beef in a skillet until browned and cooked through. Drain the cooked beef from the liquid. Pour the BBQ sauce into a pan and stir until the ground beef is evenly coated with the sauce.

    Unroll both sheets of refrigerated pie crust dough. Cut each of the round pie crusts into a total of 24 small circles (12 for the top and 12 for the bottom) to fit into a muffin pan (I use a cookie cutter).

    Spray a muffin pan with non-stick cooking spray and place the 12 pie crust circles evenly at the bottom of each individual muffin pan well.

    On top of each pie crust mini, place about 1 Tablespoon of ground BBQ beef, and then sprinkle shredded cheese over top of the beef (to your taste). Place the second circle of pie crust dough over the top and then press down for the seams to connect and seal.

    You will repeat this step until you have a total of 12 mini BBQ beef pies. On the top of each individual pie, you will cut two small slits on the tops to allow the steam to escape during baking.

    Place into the oven and bake at 425 degrees F. for about 15 to 20 minutes or until the tops are golden brown. Carefully remove the mini pies from the oven and serve warm. Enjoy!

    *If you have any BBQ mixture left over just add it to the top when serving.

    Recipe Tips & Tricks

    • Use a standard-size or jumbo-size muffin pan. If using the standard size then you may end up with 9 to 12 pies. If using the jumbo size, you should have 6 big pies.
    • You may have some extra meat mixture left. Before serving simply top the pies with the extra meat mixture.
    • Do not overbake the mini pies or they will be tough and dry. Allow them to bake for about 15 to 20 minutes, this should be enough time.
    • When ready to reheat the beef pies, try heating them in the air fryer for a slightly crispy texture. You may also reheat them in the microwave but the pies will be soft.

    Storage

    Store any leftovers in an airtight container or plastic bag in the refrigerator for up to 3 days. Before serving, reheat them in the microwave to make them warm all the way through but soft. To make them slightly crispy again, reheat them in the air fryer instead for a few minutes.
