I know you are probably thinking what is Simply LaKita doing having a post on Friday, the usual posting schedule is only on Monday and Wednesday. Well, guess what? I am adding another day to the regular posting schedule to bring you more tasty recipes and food-related post. Isn’t that awesome!
If you have been following me for awhile then you may recall that I used to post 3 days a week, but then life got busy and I decided to cut back to just two days. Now I have so much to share with you and also expand a bit to work with brands and so it only makes sense to add another day.
So…Monday and Wednesday will remain the same and I will still bring you my same rambling antics and delicious recipes and Friday will mainly be sponsored content. Speaking of sponsored content, I warned you that I tend to ramble and be all over the place, but Influenster reached out to me for their #MakeItYours cookie campaign using Country Crock Spread. Now I have used Country Crock for many years in the container and when I found out that they were now offering the same great spread in a carton as one pound sticks, then it only made sense for me to give it a try.
When I make cookies I pretty much just use butter, but this is a fantastic substitute and the cookies came out delicious and I could not tell ANY difference. Influenster gave me the products to try for free and the recipe was my take on Country Crock’s Make It Yours Recipe, but any opinions expressed here are my own.

Make it Yours Cookies Ingredients:
- 1 cup Country Crock
- 3/4 cup sugar
- 3/4 cup light brown sugar, firmly packed
- 1 large egg
- 1 large egg yolk
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/4 teaspoon baking soda
- 6 oz. semi-sweet chocolate chips
- 6 oz. M & M’s
Preheat oven to 375 degrees F. Line two large cookie sheets with parchment paper and set aside.
In a large mixing bowl, using an electric mixer combine the Country Crock, sugar, brown sugar, egg, egg yolk, and vanilla until fully combined.
In a separate small bowl, whisk together the flour, baking powder salt, and baking soda.
Using a wooden spoon slowly add the flour mixture into the dough until blended. The dough will be soft and creamy. Now fold in the chocolate chips and M & M’s until well blended and distributed throughout the dough. Spoon the cookie dough onto the prepared sheet pans, spacing 1 to 2 inches apart depending on how large you make your cookies. The dough will spread a little so be sure to keep that in mind. Bake 10 to 12 minutes until the cookies are light golden brown and if you like a softer cookie then remove once the bottom becomes golden brown. Allow the cookies to cool in the pan on a wire rack for 1 minute and then transfer them to the wire rack to finish cooling completely.
