Some days I am just not really in the mood to cook anything. That sounds pretty crazy considering that I am a food blogger, this I know. But it happens. On those days however I still have to eat something so on those particular days I just pull out whatever I have in my refrigerator and try to come up with something new.
So for dinner tonight, I warmed up some leftover rice that I had, as well as some hot and spicy slaw that I made with red cabbage and carrots, and I topped all of that off with a new vegan Caesar dressing that I picked up at the grocery store that I wanted to give a try.
Dinner is served…and a great way to get rid of some leftovers.

I love those last minute meals thrown together! These looks delicious. I think mine are usually including egg salad and random lettuce and peppers!

Leftover rice and quinoa are great for new creations. If I’m feeling lazy and I have leftover rice or quinoa, I’ll usually add some sauteed veggies and call it a day.
