These Funfetti Rice Krispie Treats are a great snack for anyone. Its white chocolate cover rice krispie treats that's topped with colorful rainbow sprinkles. The perfect fun treat.

Today I'm sharing with you a recipe for rice krispie treats!
Now I've shared other similar recipes for these with you already on the blog but today's version will include rainbow sprinkles, melted white chocolate, and pink food coloring
If you would rather not use food coloring, then feel free to omit it or use another color that you prefer. I also love how this recipe reminds me of a cake and it can totally work as a birthday cake substitution if you wanted to have something different.
I would certainly love to have some funfetti rice krispies on my birthday AND some cake as well, but that's just me because I love sweets.

Ingredients You'll Need
- Rice Krispies Cereal - Use any brand of crispy rice cereal that you prefer. This is the main ingredient when it comes to rice krispie treats. Try to use fresh or recently opened cereal.
- Marshmallows - A 10-ounce bag of mini marshmallows can be used to make this recipe. I prefer using them because they melt easier. Be sure that you use fresh soft marshmallows as they work best and help make the treats ultra gooey.
- Rainbow Sprinkles - For this recipe, I chose to use rainbow sprinkles, but feel free to use any sprinkles that you prefer. Try avoiding nonpareils (the tiny round sprinkles) as they will bleed into the cereal mixture.
- White Chocolate - Used to top our rice krispie treats to create a white chocolate layer. Use white chocolate chips, morsels, or bars.
- Pink Food Coloring - Gives the white chocolate that fun and pretty pink color. If you have problems finding pink food coloring then try using a small amount of red food coloring. Feel free to omit this ingredient all together if you prefer.
- Butter - You will need salted butter, but if you only have unsalted butter, then you can use that instead. Just add a pinch of salt with the butter to melt.
- Vanilla Extract - Use the clear imitation vanilla extract if available or regular pure vanilla extract in the same unit of measure.
- Salt - I prefer to use kosher salt for dessert recipes. This prevents the treats from tasting flat and helps to balance the sweetness.
- Oil - May use canola, vegetable, or coconut oil to help smooth out the white chocolate.

Step By Step Instructions
Begin the recipe by lightly spraying a 9×13-inch baking dish with cooking spray. Set aside. In a large saucepan over medium-low heat, add the butter and allow it to melt. Add the marshmallows and stir continuously until melted and smooth. Add the vanilla extract and salt and stir to combine.
Carefully remove the saucepan from the heat and immediately stir in the rice krispies cereal and rainbow sprinkles until fully combined.

Add the mixture into the prepared baking dish and press evenly using a rubber spatula that has been sprayed with cooking spray. Set the rice krispie treats aside while you prepare the white chocolate topping.
In a small bowl, add the white chocolate chips and oil. Place into the microwave and cook for 30 seconds at a time. Stopping to stir the mixture until the white chocolate has melted and is smooth after stirring. Stir in 2 to 3 drops of food pink coloring and stir to distribute.
Evenly pour the melted white chocolate over the rice krispie treats. Spread in an even layer. Top with some additional sprinkles.
Allow the white chocolate to fully set and slightly harden before cutting the rice krispie treats into squares to serve. Enjoy!
Recipe Tips & Tricks
- When pressing them into the pan, to prevent sticking, dampen your hands a bit with water or lightly spray a rubber spatula with cooking spray and use that instead.
- Spread the rice krispie treat mixture evenly into the baking dish with damp hands, but try not to press down with a lot of pressure. You want to gently pat them down and then stop. This will keep the treats soft and chewy instead of hard and crispy.
- Don't be afraid to add more marshmallows, it will make them even gooier!
- When microwaving the white chocolate, be sure to watch it carefully as it can burn easily.
Storage
Store any leftover rice krispie treats in an airtight container at room temperature for up to 4 days if they can last that long in your home. These treats do not have to be kept in the refrigerator.

- 10 ounces mini marshmallows
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 5 cups rice krispies cereal
- ½ cup rainbow sprinkles, plus more for topping
- 1 ½ cups white chocolate chips
- 2 tablespoons oil
- 2 drops pink food coloring

- Carefully remove the saucepan from the heat and immediately stir in the 5 cups rice krispies cereal and ½ cup rainbow sprinkles until fully combined.
- Add the mixture into the prepared baking dish and press evenly using a rubber spatula that has been sprayed with cooking spray. Set the rice krispie treats aside while you prepare the white chocolate topping.
- In a small bowl, add the 1 ½ cups white chocolate chips and 2 tablespoons oil. Place into the microwave and cook for 30 seconds at a time. Stopping to stir the mixture until the white chocolate has melted and is smooth after stirring.
- Stir in 2 to 3 drops of food pink coloring and stir to distribute. Evenly pour the melted white chocolate over the rice krispie treats. Spread in an even layer. Top with some additional sprinkles.
- Allow the white chocolate to fully set and harden prior to cutting into squares to serve. Enjoy!

I love funfetti cupcakes, I’ve never had Funfetti Rice Krispie treats. I like the idea of cooking live Lakita! I will defiantly tune in, to eat with my eyes. Live streaming is everywhere I don’t partake much but starting next month that has to change. I guess it's the sign of the times. Wait these bad boys are topped with white chocolate????
