    I have to admit something to you.

    I'm not really a breakfast person.

    Yea, I know, it is the most important meal of the day...yada yada yada. Yes, I agree, but for some reason, it just has never been a big deal to me. Actually, I find that if I eat a big breakfast in the morning I usually end up with a mild case of the sleepiness.

    For this reason in the morning throughout the week, I usually keep it light and have a smoothie with a side of toast, but lately, I have been enjoying making a parfait and I find that if I pair this with a fresh juice, then I am good to go. What I like even more about making a parfait for breakfast is that once you slice up the fruit the only thing that is left to do is place it along with some yogurt and fruit into a container and you have yourself an easy breakfast parfait in a matter of minutes.

    Now I love making granola at home myself, but you can really use any kind that you find already made in the store. And there are lots of options and I will also use those if I am being lazy and don't want to make it myself. A parfait can also be customized to fit anyone, if you are a vegan then use non-dairy yogurt, not a fan of strawberries, then us any other fruit that you prefer.

    Ingredients
      

    • ½ cup fresh strawberries, sliced
    • ⅓ cup yogurt
    • ¼ cup granola
    • 1 tablespoon toasted coconut (optional)

    Instructions
     

    • Clean and slice the strawberries.
    • In a glass, layer yogurt, granola, strawberries, and then repeat.
    • Top with toasted coconut.

      I’ve never made a breakfast parfait. They look so fancy; I would love devouring it first thing in the morning.

        Hi Mary! They are great in the morning and although they do look fancy in the glass...I usually just dump everything in a bowl 😉

      I love eating Breakfast!!! It can be typical breakfast foods of leftovers from dinner. I just like eating in the morning. But I love eating breakfast foods for any meal of the day.
