Chocolate Chip Cookies - Easy and delicious recipe that is vegan and perfect for anyone to enjoy. These cookies are sweet, chewy, and loaded with vegan chocolate chips.
You may be noticing that things here on Simply LaKita are looking just a little different.
The blog design and layout are looking totally different and that is because 1) I was bored with the old design and it just wasn't doing it for me anymore and 2) the old design was very limiting in what I could change and adjust.
As a blogger, it is SO important to love the creative space that you are sharing and it also much allow the freedom for you to change your work...after all you own it and should be able to do with it whatever you want to right? It is so important for me to share a space with you that inspires me and that I am proud of and with that comes change. I wanted a blog design that was clean, easy to navigate, and showcased my pictures a little more. I hope that you enjoy it and understand that it still a work in progress with some more changes are still to come.

Easy Chocolate Chip Cookies {Vegan}
Ingredients
- 1 tablespoon ground flax + 2.5 Tablespoons water (flax egg) *May use 1 large egg instead
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon sea salt
- ½ cup Earth Balance butter
- ½ cup packed dark brown sugar
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
- ¾ cup non-dairy chocolate chips (such as Enjoy Life)
Instructions
- Heat the oven to 350 degrees F. and place a piece of parchment paper over a baking sheet.
- Combine the flaxseed and water in a small bowl. Set aside and allow time to thicken.
- In a medium bowl, whisk the flour, baking soda, and salt in a bowl. Set aside.
- Place the butter in another bowl and add in the sugars and whisk vigorously for about 2 minutes. The cookie dough should become light and fluffy.
- Add the flax egg and vanilla extract to the butter mix, and whisk well until combined.
- Add the flour mix to the butter mixture and stir together with a wooden spoon just until combined and be careful not to over mix. Gently fold in the chocolate chips.
- Drop by the heaping tablespoon onto the baking sheet spaced about an inch apart and bake for 12-14 minutes, until they are light golden brown
- Remove from the oven and let cool on the baking sheet for about 5 minutes. Transfer to a wire cooling rack and let cool completely.
