How to make a Breakfast Strata:
Begin the recipe by preheating the oven to 350 degrees F. and grab a square 8 x 8-inch baking dish. Lightly spray with cooking spray and add the bread cubes in an even layer on the bottom. Set aside.
In a medium skillet over medium-high heat, add the ground sausage. Use a wooden spoon to break up the sausage as it cooks. Cook for 5 to 10 minutes until it has completely browned. Remove the skillet from the heat and drain off the fat and remove the sausage and place in the baking dish evenly on top of the bread.
Using the same skillet add the olive oil and heat thoroughly before adding the chopped onion. Cook, stirring frequently until the onion has softened and is translucent for about 2 to 3 minutes. Add the diced cling peaches and stir until warm. Remove from the heat and add to the baking dish over the sausage in an even layer.
Top evenly with the cheese. In a large bowl, whisk together the eggs, milk, salt and ground black pepper until smooth. Slowly pour over the bread mixture and press down to make sure the bread is well coated.
Cover the baking dish with aluminum foil and place it into the oven to bake for 15 minutes. Remove the foil and bake for an additional 10 minutes. Carefully remove from the oven and allow it to cool for about 5 minutes before serving. Enjoy!
