It’s hard to believe that we have this week and next week and then the month of July will be finished.

Summer is quickly winding down and there is so much going on.

Some interesting links that I came across this week were:

  2. Pokemon Go was a hit everywhere but it actually began as an April Fool’s Day joke.
  3. Samuel L. Jackson gave the most hilarious ‘Game of Thrones’ Recap Ever.
  4. Just in case you can’t get enough of Serial podcast especially Season 1 and the story of Adnan Syed, it appears that he could possibly win his retrial.
  5. And YES the Museum of Ice Cream is really happening from now until August 31st…and it includes a swimmable rainbow sprinkle pool!
  6. Campaign Zero is aimed to protect and preserve life by providing solutions to putting a stop to police violence in America.
  7. Celebrities partnered to create this powerful video ’23 Ways You Could Be Killed If You Are Black In America’
  8. This cat though…So cute!!
  9. Although National Ice Cream Day was yesterday, this recipe for a Vanilla Sour Cream Ice Cream Base from Fix Feast Flair looks like the perfect way to continue the celebration.
  10. Saveur Magazine shares a quick and easy recipe for Chicken Marsala that you should give a try along with some brownies for dessert 😉

Chocolate Mint Brownies

Chocolate Mint Brownies

Print Recipe


  • 2 cups all-purpose flour
  • 1 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1 cup neutral oil (avocado, canola, etc.)
  • 1 cup water
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 1/2 cup vegan chocolate chips



Preheat the oven 350 degrees F. and line a 13 x 9-inch baking pan with parchment paper.


In a medium-size bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt and set aside.


In a separate small bowl whisk together the oil, water, peppermint, and vanilla extract until combined.


Stir the oil mixture into the flour mixture until fully combined careful not to over mix.


Gently fold in the chocolate chips and pour the brownie mixture into the prepared pan and bake for 25 to 30 minutes or until a cake tester comes out clean.


Allow the brownie to cool completely in the pan prior to cutting into squares.

    This is one of my favorite recipes of yours ever!
    By the way, we’re totally going to that ice cream museum for my birthday. I can’t not. I’m obsessed with sprinkles.

    Yum…I bet these brownies would taste great with ice cream. I can’t believe that July is almost over. This summer has gone by extremely fast.
