    Chocolate Almond Butter Crispy Rice Treats

    These Chocolate Almond Butter Crispy Rice Treats are packed with almond butter, dark chocolate, and crispy rice cereal. The perfect way to tame the afternoon sweet cravings.

    These tasty treats are inspired by my recipe for Funfetti Rice Krispie Treats and if you cannot get enough of delicious cereal treats, then try making a simple batch of Gooey Rice Crispy Treats.

    In the late afternoon, after lunch but before dinner. The snack craving usually hits me pretty hard. I need a snack, but something that will be enough to hold me over until dinner. That is when having treats prepared already comes in handy.

    The treats have to be something that is also easy to make and ready in minutes. That is exactly what makes these chocolate almond butter crispy rice treats so perfect. They are crispy, sweet without being too sweet, and contain a dark chocolate topping. The flavor combination is so perfect to enjoy when the afternoon craving hits.

    Ingredient Notes

    These ingredients should be easy to locate at your local grocery store. You may find that you already have many of the ingredients on hand already in your kitchen.

    1. Almond Butter - Use natural creamy almond butter. You could substitute peanut butter if you prefer in the same unit of measure.
    2. Honey - This ingredients add sweetness to the recipe. Try to use local honey if you have it available.
    3. Hemp Seeds - Only two tablespoons are needed and provide a bit of protein and texture to the recipe.
    4. Vanilla Extract - Try to use pure vanilla extract instead of imitation vanilla for best results.
    5. Crispy Rice Cereal - Use any brand of crispy rice cereal of rice krispies cereal. You could also use puffed rice cereal if you prefer.
    6. Coconut Oil - This helps to make the chocolate topping creamy and smooth.
    7. Dark Chocolate - Makes the chocolate topping and adds another layer to the treats.
    8. Coarse or Flaky Sea Salt - This is completely option, but pairs well with this dessert recipe. Just sprinkle on top for a nice punch of saltiness.

    Instructions

    Begin the recipe by lining an 8x8-inch square baking dish with parchment paper and set aside. In a medium bowl, add the almond butter and place it into the microwave for 10 to 15 seconds to soften. Add the honey, hemp seeds, vanilla extract, and stir.

    Add the crispy rice cereal and stir until evenly distributed. Press into the bottom of the prepared pan and use a spoon to spread evenly.

    In a separate small bowl or pitcher, add the coconut oil and dark chocolate. Place into the microwave to melt, stopping to stir every 30 seconds until smooth. Spread evenly over the crispy rice treats and top with coarse sea salt.

    Place into the freezer for 20 minutes or until the dark chocolate has set. Cut into squares and enjoy!

    Tips

    • Use parchment paper to line the baking dish/sheet to prevent sticking and allow for easier cleanup.
    • Use pure vanilla extract and not imitation. It really makes a difference. If you do not have pure vanilla extract, then you may omit completely.
    • When pressing them into the pan, to prevent sticking, dampen your hands a bit with water.

    Storage

    Store any leftover uneaten treats in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 10 days. These treats do not have to be kept in the refrigerator, but they will last longer.

    Ingredients
      

    • ½ cup almond butter
    • ½ cup honey
    • 2 tablespoons hemp seeds
    • 2 teaspoons vanilla extract
    • 3 cups crispy rice cereal
    • 1 teaspoon coconut oil
    • 1 cup dark chocolate
    • ¼ teaspoon coarse sea salt

    Instructions
     

    • Begin the recipe by lining a 8x8-inch square baking dish with parchment paper and set aside.

    • In a separate small bowl or pitcher, add 1 teaspoon coconut oil 1 cup and dark chocolate. Place into the microwave to melt, stopping to stir every 30 seconds until smooth.
    • Spread evenly over the crispy rice treats and top with ¼ teaspoon coarse sea salt.
    • Place into the freezer for 20 minutes or until the dark chocolate has set. Cut into squares and enjoy!
