Chewy Chocolate Chip Granola Bars - This recipe makes a batch of simple, soft, and delicious granola bars that are the perfect mid-day snack.
It is a new week…Happy Monday! Last week was a really busy week for me so it feels good to begin a new week and to have a clean slate in order to get things done.
Just to recap a few highlights from last week I shared with you two recipes. The first was in honor of Be Kind to Animals Week and we celebrated it by making Sweet Potato Dog Treats and sharing a little information about my two fur babies, Shakespeare and Gabby. The second recipe was for Strawberry Preserves Donuts that would have been a great treat to share for Mother’s Day, but do not worry because donuts are the perfect treat anytime in my book. Recipe
Chewy Chocolate Chip Granola Bars
Ingredients
- 2 Β½ cups old-fashioned oats
- 2 Β½ cups brown rice cereal
- Β½ cup brown sugar, packed
- Β½ cup coconut oil, melted
- Β½ cup agave nectar
- Β½ teaspoon sea salt
- Β½ teaspoon vanilla extract
- 1 cup chocolate chips
- Β½ cup pecans, chopped (optional)
Instructions
- Preheat the oven to 350 degrees F. and line a 13 x 9-inch rectangle-baking dish with parchment paper.
- In a large mixing bowl, add the oats, rice cereal, sugar, oil, agave, salt, vanilla, and give the mixture a stir to combine the ingredients.
- Next, fold in the chocolate chips and pecans until they are evenly distributed throughout the mixture.
- Pour into the prepared pan and spread evenly. Place into the oven and bake for 10 minutes until the oats have become golden. Remove the baking dish from the oven and allow the granola bars to cool completely in the pan prior to cutting. Cut the granola in the shape of bars and store the chewy chocolate chip granola bars in an airtight container.

Iβve made my own granola bars once, they were the hard and crusty version but they were delicious so I have no complaints. Iβm ready to try my hand at making these bad boys now.

Congrats on the features!! I was totally talking about you this morning. We had pancakes and my youngest daughter, remember the peach preserves lover, brought out the strawberry Bonne Maman for her pancakes, which instantly reminded me of you and your donuts. Aww...I love it and thank you so much for the kind words π After you mentioned it I had to go out and grab some of the Bonne Maman peach preserves and I have used it on just about everything including some pork chops...I may share that recipe later...but I will have to smear it on some pancakes next π
