It is a new week…Happy Monday! Last week was a really busy week for me so it feels good to begin a new week and to have a clean slate in order to get things done.

Just to recap a few highlights from last week I shared with you two recipes. The first was in honor of Be Kind to Animals Week and we celebrated it by making Sweet Potato Dog Treats and sharing a little information about my two fur babies, Shakespeare and Gabby. The second recipe was for Strawberry Preserves Donuts that would have been a great treat to share for Mother’s Day, but do not worry because donuts are the perfect treat anytime in my book. That post was also featured on Honest Cooking and I will link it HERE if you would like to check it out. I also want to remind you it included a giveaway for a chance to win a 12-piece Le Creuset Cookware Set, so just in case you missed it, then I will link it below.

Be sure to enter for your chance to win because you might just be the lucky winner.

Last week I also received an e-mail that my recipe for Chocolate S’mores Cups was featured on The Feed Feed with some other yummy looking marshmallow recipes, a few of which I will certainly be giving a try.

And…

If you are not following me on Instagram @simplylakita, then be sure to do it because I have been sharing so many things on my Instagram stories lately.

Such as my endless cups of coffee…

Or the awesome goodies that I sometimes receive in the mail from brands.

Anyway, I hope that you have a wonderful productive week and still find some time to take care of yourself 🙂

Chewy Chocolate Chip Granola Bars  Ingredients:

  • 2 ½ cups old-fashioned oats
  • 2 ½ cups brown rice cereal
  • ½ cup brown sugar, packed
  • ½ cup coconut oil, melted
  • ½ cup agave nectar
  • ½ teaspoon sea salt
  • ½ teaspoon vanilla
  • 1 cup chocolate chips
  • ½ cup pecans, chopped (optional)

Instructions:

Preheat the oven to 350 degrees F. and line a 13 x 9-inch rectangle-baking dish with parchment paper.

In a large mixing bowl, add in the oats, rice cereal, sugar, oil, agave, salt, vanilla, and give the mixture a stir to combine the ingredients. Next fold in the chocolate chips and pecans until they are evenly distributed throughout the mixture.

Pour into the prepared pan and spread evenly. Place into the oven and bake for 10 minutes until the oats have become golden. Remove the baking dish from the oven and allow the granola bars to cool completely in the pan prior to cutting. Cut the granola in the shape of bars and store the chewy chocolate chip granola bars in an airtight container.

I’ve made my own granola bars once, they were the hard and crusty version but they were delicious so I have no complaints. I’m ready to try my hand at making these bad boys now.

I like the crispy hard baked granola bars too, but sometimes you’re just in the mood for some chewy granola 😉

Congrats on the features!! I was totally talking about you this morning. We had pancakes and my youngest daughter, remember the peach preserves lover, brought out the strawberry Bonne Maman for her pancakes, which instantly reminded me of you and your donuts. I told my family about your donuts and your fabulous blog. “You know the lady with the microwave popcorn idea… her.” 🙂 “She has the best pictures and recipes.”
And as always you know I have to pin this yummy recipe!
    XOXO

Aww…I love it and thank you so much for the kind words 🙂 After you mentioned it I had to go out and grab some of the Bonne Maman peach preserves and I have used it on just about everything including some pork chops…I may share that recipe later…but I will have to smear it on some pancakes next 😉
